Finding uses for leftover meat can be a bit of a challenge but with food so expensive, no one wants to let it go to waste.
Mexican Mac & Cheese, Baked Enchiladas, and Sweet BBQ Pork Chili are some of our favorite recipes to use up leftovers but Second Chance Quesadillas is probably the easiest recipe of all.
A fantastic dinner idea, a great appetizer or party food, these can also be frozen and reheated as a perfect anytime snack!
What you’ll need to make Second Chance Quesadillas
- Leftover Cooked Meat – Any leftover, cooked shredded, chopped, or pulled chicken, pork, or beef.
- Black Beans – canned, drained and rinsed. 15 ounce can. Pinto beans can be used instead.
- Onion – We use half of one small yellow onion, about 1/2 cup, chopped. White onions, red onions, or shallots may be used instead.
- Diced Green Chilies – small can, 4 ounces.
- Cilantro – One bunch, chopped, around 1/3 of a cup. Feel free to leave this out if it tastes like soap to you!
- Shredded Cheese – Any variety may be used. We prefer Sharp Cheddar or Cheddar Jack.
- Flour Tortillas – Medium sized
- Toppings – tomatoes, bell peppers (any color), chopped green onions, black olives, jalapeno, avocado, sour cream, salsa.
How to make Second Chance Quesadillas
Second Chance Quesadillas are super easy to make. They are great for sharing and delicious as a snack or a party food, Seriously one of the best (and easiest) things to feed a crowd!
Preheat the oven to 200 degrees F to keep the quesadillas warm.
In a large mixing bowl combine the leftover meat, black beans, onion, green chilis, and cilantro (if using).
Stir until the mixture is well combined.
On each flour tortilla layer two tablespoons of shredded cheese, 1/2 cup of filling and then top with two additional tablespoons of shredded cheese.
Fold the quesadillas in half and set aside.
Lightly spray a large skillet with cooking spray then heat over medium heat.
Place two folded quesadillas into the skillet with the long, straight edge of each running down the middle.
Cook the quesadillas 3 to 4 minutes, until the cheese has melted and the quesadillas have browned slightly, then flip over and repeat on the other side.
Transfer the cooked quesadillas to a baking sheet and place into the preheated oven to keep warm. Repeat with remaining quesadillas.
After you have cooked all of the quesadillas, remove them from the oven and allow them to rest on the baking sheet on the counter for 3-5 minutes.
Slice into wedges and serve with salsa, sour cream, chopped green onions and extra cilantro if desired. Enjoy!
