Method
- Preheat the oven to 200 degrees F to keep the quesadillas warm.
- In a large mixing bowl combine leftover meat, black beans, onion, green chilis, and cilantro.
- Stir until the mixture is well combined.
- On each flour tortilla layer two tablespoons of shredded cheese, 1/2 cup of filling and then top with two additional tablespoons of shredded cheese. Fold the quesadillas in half and set aside.
- Lightly spray a large skillet with cooking spray then heat over medium heat.
- Place two folded quesadillas into the skillet with the long, straight edge of each running down the middle.
- Cook quesadillas 3 to 4 minutes, until the cheese has melted and the quesadillas have browned slightly, then flip over and repeat on the other side.
- Transfer the cooked quesadillas to a baking sheet and place into the preheated oven to keep warm. Repeat with remaining quesadillas.
- After all quesadillas have been cooked, remove from the oven and allow to rest for 3-5 minutes.
- Slice into wedges and serve with salsa, sour cream, chopped green onions and cilantro if desired. Enjoy!
