How to Make Bite Sized Sausage Rolls
When I met my husband, his Mom made the BEST sausage rolls that I have ever tasted. They were flaky and light, and she served them on a platter with cocktail sauce for dipping. That platter was always the first one empty.

Before you begin
There aren’t many ingredients in this recipe. You’ll need one package of thawed frozen puff pastry (thawed in the fridge) and one 16 ounce package of regular premium pork sausage.
Preheat the oven to 425 degrees F. Line two baking sheets with silicone pads, parchment paper, or lightly spray both with cooking spray. Set aside.
Remove one sheet of puff pastry and unfold on a lightly floured surface. Using a rolling pin, roll the dough until it becomes a 9 x 13 rectangle.
Cut the dough into two equal lengthwise portions.
Then cut a one pound package of regular pork sausage in half and set one half aside.
Separate the pork sausage into two parts and evenly distribute up the middle of each long pastry rectangle.
Using a pastry brush, brush one lengthwise inside edge of the pastry lightly with water.
Fold the pastry over the meat and pat down to seal. Crimp the edges closed with a fork. Cut off the excess dough, leaving an edge of only about 1/2 inch.
Cut the rolls into pieces between 1/2 and 1 inch and move to the prepared baking sheet.
Brush rolls with lightly beaten egg. This will help the Bite Sized Sausage Rolls to brown up nicely.
Place into the preheated 425 degree F oven and bake for 14-15 minutes until golden brown.
Serve immediately with cocktail sauce for dipping if desired. Refrigerate any leftovers but don’t expect to have any.
These are such a great size that everyone keeps coming back and before you know it they are all gone. Enjoy!

Hi Tammy! They really are. They also freeze well for easy reheating at a later date but my family eats them too fast so I never get the chance to freeze them. Thanks for commenting!
