Easy Thai Chicken Salad is packed with crunchy cabbage and chopped chicken all tossed in a delicious creamy Asian inspired peanut dressing.

Easy side dishes are some of our favorite things to bring to potlucks and picnics. This one is always well received. It can be made ahead of time and tastes even better then next day.

This simple salad uses bagged coleslaw mix to save time, and the dressing is made up of pantry ingredients that you probably already have on hand. This is a great shareable side dish recipe. and it makes a great light lunch too!

What You’ll Need to Make Easy Thai Chicken Salad

  • Shredded Cabbage Coleslaw Blend – Using 2 bags of pre-made coleslaw mix saves a lot of time in this recipe. If you want to prepare your own you’ll need to thinly slice about 11 cups of green or purple cabbage (or a mixture of the two) and peel and grate two medium carrots. This should give you the same yield of about 12 cups of coleslaw mix.

  • Green Onions – three green onions washed and thinly sliced, white and green parts thinly sliced.

  • Fresh Cilantro – about half of a standard bunch, coarsely chopped, about 1/2 cup. Fresh parsley may be substituted.

  • Cooked Chicken – chopped or shredded, bite sized pieces, about 2 cups total.

  • Dry Roasted Peanuts – these are optional added for garnish if desired. Cashews may also be used.

  • Creamy Peanut Butter – any brand of smooth peanut butter may be used.

  • Soy Sauce – we use regular soy sauce but you can also use low sodium soy sauce or substitute coco aminos if you prefer.

  • Fresh Lime – the juice of one medium sized lime.Don’t have a lime? Substitute 2 tablespoons of bottled lime or lemon juice instead.

  • Asian Flavors – Sesame Oil, Sweet Chili Sauce, Fish Sauce – you need all of these.

  • Brown Sugar – light or dark, packed.

  • Fresh Ginger – a 2 inch by 2 inch piece, peeled and then grated with a cheese grater gives you about one tablespoon. If you don’t have fresh, you can use one teaspoon of dried ginger as a substitute.

  • Fresh Garlic – 2-3 cloves, peeled and minced. This is about 1 teaspoon. If you don’t have fresh, use 1/4 teaspoon of garlic powder instead.

How to Make Easy Thai Chicken Salad

Crunchy cabbage and chopped chicken all tossed in a delicious creamy Asian inspired peanut dressing, this is a delicious and easy salad that is great as a side, a potluck contribution, or for lunch.

It can be made ahead of time and the flavor gets better the longer it sits!

In a large bowl toss together the coleslaw mix, sliced green onions, shopped cilantro and chopped chicken until well combined. Set aside.

Add all of the creamy peanut dressing ingredients to a small bowl.

Ready to use creamy Asian peanut dressing in a bowl.

Whisk together until everything is incorporated.

Pour the dressing over the salad.

Using tongs, toss well to make sure it is evenly coated.

Serve immediately or cover and refrigerate until ready to use, tossing once more just before serving.

Salad Blend
  • 2 bags shredded cabbage coleslaw blend 14 ounces each
  • 3 green onions thinly sliced
  • 1/2 cup fresh cilantro chopped
  • 2 cups cooked chicken chopped or shredded
  • 1/2 cup dry roasted peanuts optional, for garnish if desired
Creamy Peanut Dressing
  • 1/3 cup creamy peanut butter
  • 2 tbsp soy sauce
  • 1 medium lime juiced, about 2 tablespoons
  • 1 1/2 tbsp sesame oil
  • 2 tbsp sweet chili sauce
  • 1 tbsp fish sauce
  • 1 1/2 tsp brown sugar packed
  • 1 tbsp freshly grated ginger about a 2 inch x 2 inch piece, peeled
  • 2-3 cloves fresh garlic minced, about 1 tsp

Method
 

  1. In a large bowl toss together the coleslaw mix, sliced green onions, shopped cilantro and chopped chicken until well combined. Set aside.
  2. Add all of the creamy peanut dressing ingredients to a small bowl. Whisk together until everything is incorporated.
  3. Pour the dressing over the salad and using tongs, toss well to make sure it is evenly coated.
  4. Serve immediately or cover and refrigerate until ready to use, tossing once more just before serving. Garnish with roasted peanuts if desired. Enjoy!
