What You’ll Need to Make Easy Thai Chicken Salad
- Shredded Cabbage Coleslaw Blend – Using 2 bags of pre-made coleslaw mix saves a lot of time in this recipe. If you want to prepare your own you’ll need to thinly slice about 11 cups of green or purple cabbage (or a mixture of the two) and peel and grate two medium carrots. This should give you the same yield of about 12 cups of coleslaw mix.
- Green Onions – three green onions washed and thinly sliced, white and green parts thinly sliced.
- Fresh Cilantro – about half of a standard bunch, coarsely chopped, about 1/2 cup. Fresh parsley may be substituted.
- Cooked Chicken – chopped or shredded, bite sized pieces, about 2 cups total.
- Dry Roasted Peanuts – these are optional added for garnish if desired. Cashews may also be used.
- Creamy Peanut Butter – any brand of smooth peanut butter may be used.
- Soy Sauce – we use regular soy sauce but you can also use low sodium soy sauce or substitute coco aminos if you prefer.
- Fresh Lime – the juice of one medium sized lime.Don’t have a lime? Substitute 2 tablespoons of bottled lime or lemon juice instead.
- Asian Flavors – Sesame Oil, Sweet Chili Sauce, Fish Sauce – you need all of these.
- Brown Sugar – light or dark, packed.
- Fresh Ginger – a 2 inch by 2 inch piece, peeled and then grated with a cheese grater gives you about one tablespoon. If you don’t have fresh, you can use one teaspoon of dried ginger as a substitute.
- Fresh Garlic – 2-3 cloves, peeled and minced. This is about 1 teaspoon. If you don’t have fresh, use 1/4 teaspoon of garlic powder instead.
