Method
- In a large bowl toss together the coleslaw mix, sliced green onions, shopped cilantro and chopped chicken until well combined. Set aside.
- Add all of the creamy peanut dressing ingredients to a small bowl. Whisk together until everything is incorporated.
- Pour the dressing over the salad and using tongs, toss well to make sure it is evenly coated.
- Serve immediately or cover and refrigerate until ready to use, tossing once more just before serving. Garnish with roasted peanuts if desired. Enjoy!
