What You’ll Need to Make Bacon Cheddar Baked potato Skins

The ingredients for Bacon Cheddar Baked Potato Skins aren’t precise. Potato skins are not fancy – they are not meant to be! Make them with as many or as little toppings as you want.

  • Potato Skins – Our favorite potatoes for baking are Russet Potatoes. They have thicker skins and a fluffy inside so they work great for potato skins and also for twice baked potatoes. Yukon Gold Potatoes also work well.

  • Shredded Cheese – Cheddar cheese is usually the favorite for potato skins but these are delicious with any cheese that melts nicely in the oven. Other choices include Mozzarella, Cheddar Jack, Monterey Jack, Colby, Havarti, or Gouda. Use whatever you have on hand in any combination you like.

  • Bacon Bits – If we have the time, we make Oven Bacon and use the crispy cooked bacon all chopped up on top of the potato skins but the pre-made bacon bits from the store taste pretty great too.

  • Green Onions – When we have fresh green onions or chives we will chop them up and use as a garnish on top. Dried chives also work. Completely optional.

How to Make Bacon Cheddar Baked Potato Skins

Baked potato skins are a favorite restaurant appetizer and a great way to use up part of the potato that you may normally just throw away. We save them in a zip top bag in the freezer when we make twice baked potatoes and when we need a snack, we top them with pretty much whatever we want and we bake them!

Preheat oven to 375 degrees F. Spread thawed potato skins onto a baking sheet.

Potato Skins topped with cheese, salt & pepper, bacon and green onions on a baking sheet.

Generously sprinkle shredded cheese onto each potato skin. Sprinkle with salt & pepper to taste. Sprinkle bacon bits and/or chopped green onion or chives over cheese.

Bake for 15 minutes or until cheese is melted. Serve with sour cream for dipping. Enjoy!

  • 12 Potato skins thawed, if frozen
  • 2 cups Cheddar cheese shredded
  • Salt & pepper to taste
  • 1/2 cup Bacon bits
  • 1/2 cup Green onion chopped, or chives
  • Sour cream for serving, if desired
