Sheet pan shrimp fajitas are a fast and flavorful dinner made with shrimp, bell peppers, red onions, and a simple homemade spice blend.

Ready to eat in about 20 minutes, everything cooks on one pan for an easy, family-friendly meal. Simple, delicious, and perfect for families on the go!

What You’ll Need to Make Weeknight Sheet Pan Shrimp Fajitas

  • Cooking Spray – We use regular cooking spray for this but any cooking spray, parchment paper or silicone baking mat may be used instead.

  • Shrimp – We use between 1-2 pounds of uncooked shrimp 31-40 size, peeled and deveined.

  • Bell Peppers – 3 medium bell peppers, any color. This is 3-4 cups, cut into strips.

  • Onion – We like to use one small red onion cut into strips but one cup of white or yellow onion may be used if that’s what you have on hand.

  • Pantry Staples and Spices – Olive oil, chili powder, salt & pepper, garlic powder, onion powder, cumin, and paprika.

  • Lime – We juice 1 medium lime over the mixture just before serving. This is about 2 tablespoons of lime juice and bottled may be substituted.

  • Tortillas – We prefer 8 small (6 inch) flour tortillas, warmed, but corn tortillas may be used if preferred.

  • Optional Toppings – Sliced avocado, fresh chopped cilantro, sour cream, salsa, jalapenos sliced (or pickled), and lime wedges.

How to Make Weeknight Sheet Pan Shrimp Fajitas

These easy sheet pan shrimp fajitas are made with juicy shrimp, sweet bell peppers, red onions, and a perfectly balanced fajita spice blend. A quick, healthy weeknight dinner with bold flavor and minimal cleanup.

Spraying a large, rimmed baking sheet with cooking spray.

Preheat the oven to 450 degrees F. Spray a large rimmed baking sheet with cooking spray and set aside.

Tossing the peppers, onions and shrimp in olive oil.

In a large bowl, combine shrimp, pepper strips, red onion and olive oil. Toss to combine.

Tossing the mixture in the pantry spices to create the fajitas.

Add chili powder, salt, pepper, garlic powder, onion powder, cumin, and paprika. Stir until well coated.

Sheet Pan Shrimp Fajitas spread evenly on the pan, ready to cook.

Spread mixture evenly on the prepared baking sheet.

Stirring the fajitas in the oven before turning on the broiler.

Cook for 8 minutes until shrimp are firm and bright pink then stir.

Turning the oven broiler on high for the last 2 minutes of cooking.

Turn on the oven’s broiler and cook an additional 2 minutes.

Weeknight Sheet Pan Shrimp Fajitas, on the pan, right out of the oven.

Remove from oven and squeeze lime over the mixture.

Serve on warmed tortillas, topped with optional toppings if desired. Enjoy!
