Simple Weeknight Meatloaf is a great family meal. Hearty and satisfying comfort food made with simple spices and pantry ingredients!

Trying to make hearty and satisfying dinners when you have a family on the go can seem impossible. Especially when everyone is coming and going!

This recipe is very simple and includes ingredients that are readily available in any kitchen. Leftovers are delicious and our kids ask for it over and over again. Simple, home comfort food.

What You’ll Need to Make This Meatloaf

  • Ground Beef – You’ll need two pounds of any fat content ground beef (we like 80/20 the best as the fat keeps the meatloaf moist!). You can also try adding ground sausage to the ground beef – so good!

  • Egg -We use one large egg as a binder. Two eggs seems to make the meatloaf less tender.

  • Onion – One medium onion, chopped. We use yellow onion, but any type of onion may be used. If you don’t have a fresh onion, 1-2 tablespoons of dried minced onions can be used instead.

  • Pantry Spices – Onion and Garlic powder. This recipe is one of the rare times when we prefer garlic powder to using fresh garlic.

  • Worcestershire Sauce – One of our favorite ingredients – this just adds something great to the meatloaf. If you don’t have any, don’t worry, just add a tablespoon of steak sauce or barbecue sauce instead.

  • Yellow Mustard – Adds a little tang to the meatloaf. An equal amount of ketchup may be substituted.

  • Topping (If desired) – My family loves to eat this meatloaf with brown gravy, but they also enjoy it when we make a simple glaze of 1/4 cup ketchup and a tablespoon of brown sugar and add it to the top of the meatloaf about halfway through the cooking time.

What to serve with This Meatloaf

Garlic Mashed Potatoes – A simple restaurant secret infuses these mashed potatoes with a delicious and light garlic flavor.

Parmesan Roasted Broccoli and Onions – roasted in classic flavors of Parmesan cheese and garlic.

Smashed Baby Potatoes with Garlic Oil – super easy to make and pair well with almost every protein that crosses our dinner plates.

Oven Roasted Cauliflower – tossed in an easy tangy Marinade and then roasted to sweet perfection.

Pan Fried Brussels Sprouts with Bacon – Bacon, garlic and Parmesan wrap tender crisp Brussels sprouts in layers of flavor.

Melting Baby Potatoes – crispy edges and flavorful, fluffy insides!

How to make Simple Weeknight Meatloaf

This recipe is very simple and includes ingredients that are readily available in any kitchen. Leftovers are delicious and our kids ask for it over and over again. Simple, home comfort food!

Preheat oven to 375 degrees F.

In a medium bowl combine ground beef, egg, chopped onion, onion powder, garlic powder, Worcestershire sauce, yellow mustard and salt and pepper.

Using your hands, mix together until all the ingredients are well incorporated. I have found that this is the easiest and fastest way to mix everything together.

Form the meat into a loaf shape and place into an ungreased oven safe dish. Darker, metal pans will make the meat cook faster than glass pans.

Place into the preheated oven and bake on the middle rack for about an hour,

Remove from the oven once the internal temperature of the meatloaf reaches 170 degrees.

Cut the meatloaf into even slices. I usually scrape off the fat that gathers around the bottom of the meatloaf with a spoon prior to slicing.

Serve immediately with gravy if desired. Enjoy!
