Fresh strawberries are ranked as one of our favorite summer things because there are just so many ways to enjoy them! This quick and easy recipe for Simple Microwave Strawberry Jam may seem a little unusual but it is an experiment worth trying, even if you have never made homemade jam before.
Adding sugar and heat to the berries reduces them, concentrating the flavors and thickening the mixture, resulting in a glossy jam that is delicious on toast, English muffins and even ice cream!

How to make Simple Microwave Strawberry Jam
Traditional jams and jellies can involve a pretty big learning curve that doesn’t appeal to everyone. This quick and easy shortcut recipe to make jam in the microwave is a great way to use fresh fruit to create something different and delicious!
Wash the strawberries, remove green parts and cut the berries into small chunks.
Process the berries in a food processor until they are the desired size. You can make them as fine or as chunky as you like. Chunkier berries will take a little longer to thicken up in the microwave process.
Pour the mixture into a large microwave safe bowl. You want the mixture to fill only about 1/3 of the bowl.
Add sugar, salt and lemon juice and stir to combine.
Place a microwave safe plate into the microwave and place the bowl on top of the plate. Even when the bowl is only 1/3 full, there is always the possibility that it might spill over while it is cooking. The plate is the insurance policy just in case!
Cook the mixture on high for 5 minutes.
Remove the bowl from the microwave and stir the mixture. It will still seem thin.
Return to the microwave and cook 5 additional minutes.
Remove and stir again. The mixture should be starting to look glossy, more like a sticky syrup and coat the spoon. If it does, it has cooked long enough and is ready to be cooled.
If not, stir, return to the microwave, cook for an additional 5 minutes and then check.
Remove the mixture from the bowl to a small jar or bowl and refrigerate overnight. The mixture will thicken as it cools.
Serve on toast, English muffins, over ice cream, on cheesecake… whatever you like. Store in the refrigerator for up to two weeks. Enjoy!
