Method
- Wash strawberries, remove green parts and cut the berries into small chunks.
- Process the berries in a food processor until they are the desired size.
- Pour the mixture into a large microwave safe bowl. You want the mixture to fill only about 1/3 of the bowl.
- Add sugar, salt and lemon juice and stir to combine.
- Place a microwave safe plate into the microwave and place the bowl on top of the plate. Cook the mixture on high for 5 minutes.
- Remove the bowl and stir the mixture. It will look thin.
- Return to the microwave and cook 5 additional minutes.
- Remove and stir again. The mixture should look glossy, more like a sticky syrup and coat the spoon. If it does, it is ready. If not, stir and cook for 5 more minutes.
- Remove the mixture from the bowl to a small jar or bowl and refrigerate overnight. The mixture will thicken as it cools.
- Serve on toast, English muffins, over ice cream, on cheesecake... whatever you like. Store in the refrigerator for up to two weeks. Enjoy!
