Preserve fresh strawberries with a dehydrator and then enjoy in oatmeal, yogurt, Trail Mix, use in baking, or just eat them plain!

Dehydrated strawberries are a versatile pantry staple. Dehydrated fruit can be stored in an airtight container for up to a year. They are delicious on their own but make a wonderful addition to all sorts of things!

What do you do with Dehydrated Strawberries?

Dehydrated strawberries have many uses! My kids like to add them to trail mix, put them in oatmeal, use them in their smoothies, yogurt, and breakfast cereal and they also like to eat them plain.

One of my favorite uses is to chop and add to baking. One of my favorite recipes to add them to is my Classic Bran Muffins – just stir them into the batter before baking. You can add them to cakes, loaves, muffins, even cookies.

What if I don’t have a dehydrator?

Good news! If you don’t have a dehydrator, you can use your oven. It takes a little longer and you have to watch them a little more closely than you do in a dehydrator but you can dehydrate in your oven at 170-175 degrees F. The instructions are in the Notes section of the recipe card.

How To make Dehydrated Strawberries

Fresh strawberries are very easy to dehydrate and make a great beginning dehydrator project. One quart (about 4 cups) of fresh strawberries yields one cup of dehydrated strawberries.

You can do more or less, whatever works for you. Be aware that if you’re making more, it will take a little more time to dehydrate them because you will need more airflow.

Clean the strawberries and cut off the tops. Cut them into slices no more than 1/4 inch thick.

Line the dehydrator trays with mesh screens and lay out the strawberry slices so they are not touching.

You can use as many trays as you like, as long as you have the mesh screens. These screens are specific to your dehydrator and serve two purposes – they keep the strawberries from sticking and they keep them from falling through the cracks as they shrink. I tried to do this without the screens once and it was incredibly frustrating.

Stack the dehydrator trays and put on the lid, setting the heat to 135 degrees (they can be dehydrated at temperatures between 135 and 160 degrees, depending on the temperature range of your dehydrator).

If your dehydrator does not have 135, turn it to the lowest temperature you have available and check on the strawberries a little more often.

Dehydrate for 2-3 hours, flipping strawberries over and rotating the trays a couple of times.

The strawberries are ready when they are no longer spongy and do not feel sticky to the touch.

The smaller ones may be done before the larger ones. Just take them out and put the ones that need a little more time back in for a while longer.

Allow to cool and then store in an airtight container or zip top bag until ready for use. Enjoy!

  • 1 quart fresh strawberries about 4 cups

Instructions

  • Clean the strawberries and cut off the tops. Cut into 1/4 inch slices.
  • Line the dehydrator trays with mesh screens and lay out the strawberry slices so they are not touching.
  • Stack the dehydrator trays and put on the lid, setting the heat to 135 degrees (they can be dehydrated at temperatures between 135 and 160 degrees, depending on the temperature range of your dehydrator).
  • Dehydrate for 2-3 hours, flipping strawberries over and rotating the trays a couple of times.
  • The strawberries are ready when they are no longer spongy and do not feel sticky to the touch.
  • Allow to cool and then store in an airtight container or zip top bag until ready for use. Enjoy!

Notes

To dehydrate in the oven, set the rack in the middle and preheat to 200 degrees F.  Line a baking sheet with a silicone baking mat or parchment paper.  Prepare strawberries as directed above but instead, lay strawberries out on the baking sheet.  Do not allow them to touch.  Bake at 170-175 degrees F, flipping occasionally, until the strawberries are no longer spongy or sticky.  This process requires more supervision and a little more time but it can be done!
