Watermelon Lime Sorbet is a simple summertime treat with just four ingredients. Dairy free, delicious and refreshing!

There’s nothing more refreshing than cold watermelon on a hot day. This simple twist takes it up a notch by blending the flesh of a mini watermelon into a liquid, adding a simple syrup with just a touch of lime, and then processing it in an ice cream machine until thick. So easy and awesome!

How to make Watermelon Lime Sorbet

After what seemed like forever, summer is finally upon us! With summer comes warmer weather, outdoor activities and of course, all our summer favorite foods!

We live in Arizona where summer is not as welcomed as it is in other parts of the country. It has been known to get a little warm here so anything we can do to cool off is worth trying. This Watermelon Lime Sorbet began as an experiment and quickly became a regular summer treat in our house. So good!

Create simple syrup by adding 1/2 cup sugar and 1/2 cup water to a small saucepan and stirring. Bring to a boil over medium-high heat until mixture is clear (about 3 minutes). Allow to cool.

Simple syrup is adds both texture and flavor. You will want to make this ahead of time and allow it to cool so that you don’t have to wait to get everything combined.

Using a knife, remove the rind and white parts from the mini watermelon and discard. Cut the watermelon into small chunks.

The chunks are going into the food processor so they don’t have to be uniform or perfect. Occasionally, seedless watermelon does have some seeds but the watermelon juice will be strained after processing, so it is not necessary to remove them.

Process the watermelon chunks in a food processor or a blender until mostly smooth.

Strain the watermelon juice through a wire mesh strainer to remove pulp and any seed parts.

Combine the strained watermelon juice, simple syrup, and lime juice and then pour the mixture into the bowl of the ice cream maker.

Process according to manufacturer’s directions until the mixture has thickened to at least a milkshake consistency.

Our ice cream maker turns it from liquid to slush to mostly sorbet in about 30 minutes but every ice cream maker is different. It should look like the picture on the right before you remove it from the machine.

Once it has been processed into sorbet you can remove to a container, cover and freeze for at least 2 hours to set it or you can eat it right away. I have found that my kids don’t want to wait and that’s okay. Life’s short. Serve and enjoy!
