Oven Roasted Cauliflower

Oven Roasted Cauliflower is first tossed in an easy tangy Marinade and then roasted to sweet perfection using high heat. Keto friendly and delicious!

Cauliflower is a blank slate and this recipe offers a lot of flavor by using a combination of a marinade and a high heat oven roasting to seal the flavor in. This makes a great side dish that tastes good with almost everything. It’s delicious, even for people that typically aren’t fans of this vegetable!

How to Make Oven Roasted Cauliflower

High heat is used to roast the cauliflower so it’s a good idea to begin preheating the oven to 500 degrees F before you begin making the marinade. Place the oven rack in the middle. The oven should be ready about the time that the cauliflower is ready to go in.

In a large bowl combine the olive oil, sliced garlic, lemon juice, salt, pepper and Parmesan cheese.

You can use fresh Parmesan for this but I typically use the green shaker Parmesan because I have it on hand and it seems to stick better to the cauliflower.

Whisk together to combine. The marinade will resemble a vinaigrette salad dressing.

Using a large bowl will allow you to toss the cauliflower into the marinade right in the bowl. Toss until well coated.

Spread the cauliflower evenly onto a baking sheet. The cauliflower can be touching, just ensure that the pieces are not on top of each other.

Place the baking sheet into the oven and roast for 10 minutes then remove, stir and return to oven for additional 10 minutes.

Serve immediately. Enjoy!

Ingredients

  • 1 large head of cauliflower cut into bite sized pieces (4-5 cups)
  • 1/4 cup olive oil
  • 1 tbsp sliced garlic 2-3 cloves
  • 2 tbsp lemon juice
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp grated Parmesan cheese

Instructions

  • Preheat oven to 500 degrees F.
  • Combine all ingredients other than cauliflower in a large bowl and whisk together to combine.
  • Add cauliflower to bowl and toss to coat.
  • Spread cauliflower evenly onto a baking sheet.
  • Place into oven and roast for 10 minutes then remove, stir and return to oven for additional 10 minutes.
  • Serve immediately. Enjoy!
