  • Brown sugar
  • Orange juice
  • Cholula or other hot sauce
  • Seasoned rice vinegar
  • Red pepper flakes
  • Kosher salt
  • Shrimp
  • Cornstarch
  • Vegetable oil
  • Fresh ginger
  • Fresh garlic
  • Cooked rice
  • Green onions
  • Sriracha (optional)

How to make Firecracker Shrimp & Rice Skillet

Firecracker Shrimp & Rice Skillet is an easy and delicious weeknight meal. The whole meal is cooked in a single skillet and ready in less than 30 minutes. A hearty and satisfying rice bowl with a great balance of sweet and spicy!

In a small bowl, stir together the brown sugar, orange juice, Cholula, seasoned rice vinegar, red pepper flakes and Kosher salt until well combined. Set aside.

Blot the shrimp dry with paper towels and move to a medium sized bowl.

Sprinkle with cornstarch and toss to coat.

Add the vegetable oil to a large nonstick skillet and heat over medium-high heat until shimmering. Add the shrimp and fry until pink, about one minute per side.

Then add the ginger and garlic to the skillet, stir and cook until fragrant, about one minute.

Reduce the heat to medium and pour the sauce mixture into the skillet. Stir the shrimp to coat.

Next, stir in the cooked rice and the sliced green onions. Cook for about 3 minutes until warmed.

Serve immediately. Drizzle with Sriracha if desired. Enjoy!

Ingredients

  • 1/3 cup brown sugar packed
  • 1/4 cup orange juice
  • 2 tbsp Cholula or other hot sauce
  • 2 tbsp seasoned rice vinegar
  • 1/4 tsp red pepper flakes
  • 1/2 tsp Kosher salt
  • 1 pound uncooked shrimp cleaned, tails removed
  • 2 tbsp cornstarch
  • 1/4 cup vegetable oil
  • 1 tbsp fresh ginger grated
  • 3 cloves garlic minced
  • 4 cups cooked rice
  • 1/2 cup green onions thinly sliced
  • Sriracha for topping, if desired
