Creamy Chicken Linguine with Brie is an easy weeknight one pot meal of chicken and creamy pasta with hints of fennel and lemon.
Easy weeknight meals are my favorite. It is always an added bonus when I can use something leftover like grilled, shredded or rotisserie chicken to create another meal and if I can do it all in one pot? Amazing!
A special thing about Creamy Chicken Linguine with Brie is that the linguine is cooked in the chicken broth and white wine so the flavors are infused right in to the pasta! With just a hint of lemon and fennel, it is delicious, balanced and super easy to make.
What you’ll need to make Creamy Chicken Linguine with Brie
- chicken broth
- white wine (or substitute an equal amount of chicken broth instead)
- heavy cream
- fennel seeds
- ground black pepper
- lemon zest
- lemon juice
- dried linguine noodles
- cooked chicken
- brie cheese
- Parmesan cheese

Creamy Chicken Linguine with Brie is a fast weeknight meal that is delicious and easy. Cooking the linguine in the broth and wine makes the pasta a whole new level of flavorful. The brie melts, combines with the broth and wraps the chicken and noodles in a flavorful creamy sauce. So good!
In a large stock pot or dutch oven, combine chicken broth, white wine*, heavy cream, fennel seeds, ground black pepper, lemon zest and lemon juice.
* The alcohol will cook off if you use wine however, if you don’t want to use wine in this recipe, just substitute additional chicken broth – use 4 cups of chicken broth total instead!
Bring to a boil over high heat.
Meanwhile, chop or shred the cooked chicken and with a sharp knife, trim the rind from the brie and cut into small cubes. Set aside.
Add the linguine to the boiling mixture, pushing down to submerge.
Simmer, uncovered, stirring often, until pasta is tender, 8 to 10 minutes.
The liquid in the pot will reduce as it is absorbed into the noodles.
Add the cooked chicken and brie cubes.
Remove the pasta from heat and let stand, uncovered, 5 to 8 minutes, stirring often to make sure all the cheese melts. With tongs or two forks, lift pasta into wide bowls.
Sprinkle with Parmesan. Serve immediately. Enjoy!.
