Slow Cooker Carolina Pulled Pork

A budget friendly twist on a traditional Carolina pulled pork recipe using Country Style pork ribs with a tangy vinegar based sauce!

Country Style Pork Ribs are a really economical dinner choice. When cooked “low and slow” in a slow cooker, the meat becomes tender and falls off the bone.

A flavorful cooking liquid infuses the flavor and pickled banana peppers bring just the right amount of heat.

What you’ll need to make Slow Cooker Carolina Pulled Pork

  • Country Style Pork Ribs – This is one of the most economical cuts of meat at the supermarket! You can use a small pork roast instead if you prefer.

  • Brown Sugar – We use light brown sugar. You can also use dark brown sugar for a deeper, richer flavor.

  • Pantry Staples – Paprika, salt & pepper, dry mustard powder, garlic salt.

  • Onion – We use one medium yellow onion, cut into chunks. White onions or sweet onions may be used instead.

  • Sliced Pickled Banana Peppers – Mild to medium sweet and tangy peppers pickled in a vinegar based brine. These offer so much flavor! Don’t skip them.

  • Apple Cider Vinegar – This adds flavor and color to the meat and helps to balance the flavor and acidity. Regular apple cider, white vinegar or white wine vinegar may be substituted.

  • Worcestershire Sauce -This adds a depth of flavor but soy sauce, coco aminos or balsamic vinegar may be used instead.

  • White Sugar – Regular white granulated sugar.

  • Sandwich Buns – Completely optional, if you want to enjoy the pulled pork as a sandwich.

  • Coleslaw – Also completely optional, but great on the side or on top in a bun!

How to make Slow Cooker Carolina Pulled Pork

Country Style Pork Ribs are technically pork ribs, but since they are cut nearer to the pork shoulder, there’s more meat on them then on regular ribs.

Cooked in the slow cooker, they shred up just as nicely as a boneless pork roast does… at about half the price!

This recipe has been in rotation in our house for years. It is easy, economical and tasty!

Seasonings for the pork prior to mixing.

In a small bowl, combine brown sugar, paprika, salt and ground black pepper. Stir together then sprinkle mixture evenly over the pork.

Place onions into the bottom of the slow cooker and place pork on top of the onions. Spread banana peppers over the top of the pork.

Pouring the apple cider vinegar mixture over the pork ribs prior to cooking.

In a small bowl or a measuring cup, combine cider vinegar, Worcestershire sauce, white sugar, dry mustard powder and garlic salt. Stir until well combined.

Pour 1/2 cup of the vinegar mixture over the pork in the slow cooker and refrigerate the remaining 1/4 cup.

Cover and cook on low for 7-8 hours or on high for 3-4 hours.

(Note: If using a pork roast, increase times to low temperature 8-10 hours or high temperature for 4-5 hours).

Remove meat, onions and peppers from slow cooker and drain the remaining liquid.

Set the onions and peppers in a medium bowl. Shred the meat into the bowl and discard the bones.

Pouring remaining vinegar mixture over the meat just prior to serving.

Pour the remaining 1/4 cup of vinegar mixture over the meat, onions and peppers and toss to coat.

Serve immediately. If desired, serve the meat on buns, topped with coleslaw. It is also delicious on it’s own. Enjoy!

  • 3 pounds country style pork ribs or 2 pound pork roast
  • 2 tbsp brown sugar packed
  • 1/4 tsp paprika
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 1 medium onion peeled and cut into chunks, about 1 cup
  • 1/2 cup sliced pickled banana peppers
  • 2/3 cup cider vinegar
