One of our family’s favorite recipes, this weeknight comfort food combines all the flavors of fresh Bruschetta with hearty stuffing and perfectly sized melty mozzarella chicken bites!
The right proportions of ripe Roma tomato, fresh garlic and basil with a hint of Balsamic vinegar is what makes Bruschetta so crazy good and addictive as an appetizer all on it’s own.
If you take that same Bruschetta and combine it with stuffing, and then use it to top bite sized pieces of chicken, tie it all together with a layer of mozzarella cheese and then bake it, you end up with Bruschetta Chicken Bake, a delicious one pan easy family weeknight meal that everyone loves!
How to make Bruschetta Chicken Bake
The original recipe for this Bruschetta Chicken Bake came from a Kraft Food and Family magazine when I was first learning to cook. It was one of the first things that I made for my family that everyone liked right away. It has a just enough of everything to make it a satisfying one pan meal.
I have made a few changes over the years from the original version but this is ultimately a chicken and stuffing comfort meal with big bold flavors – perfect for a rainy day or as a quick weeknight family meal!
Make Bruschetta by combining all Bruschetta ingredients in a small bowl.
Stir until well combined. Cover and set aside.
Please Note: Making the Bruschetta portion of this recipe a day ahead allows the flavors to really have a good chance to meld but allowing to rest in the refrigerator for even just one hour really makes the flavors come together and I highly recommend it, but you can skip this step and use it right away.
Cut three or four boneless, skinless chicken breasts into bite sized pieces and spread into one even layer on the bottom of a 9×13 baking dish and sprinkle with salt and pepper.
Spread the shredded mozzarella in an even layer over the chicken pieces.
Preheat the oven to 400 degrees F.
Place Bruschetta in a medium bowl and combine with Stove Top stuffing mix and 1 cup of water.
Stir until combined and stuffing is moistened.
Spread the stuffing and Bruschetta mixture evenly over the chicken and shredded mozzarella.
Bake 30 minutes or until chicken is cooked through (at least 165 degrees F). Enjoy!

Bruschetta Chicken Bake
Ingredients
For the Bruschetta:
- 2 medium Roma tomatoes diced
- 2 tsp minced garlic
- 1 tbsp fresh basil, chopped or 1 tsp dried
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt & pepper to taste
For the Chicken Bake:
- 3-4 boneless, skinless chicken breasts cut into bite sized pieces
- 1 cup shredded mozzarella cheese
- 1 package Stove Top Stuffing mix (or generic) 6 oz
- 1 cup water
Instructions
- Make Bruschetta by combining all Bruschetta ingredients in a small bowl. (Allowing to rest in the refrigerator for one hour to overnight really makes the flavors come together but this is optional.)
- Preheat oven to 400 degrees F.
- Place Bruschetta in a medium bowl and combine with Stove Top stuffing mix and 1 cup of water. Stir until combined and stuffing is moistened. Set aside.
- Spread chicken evenly into the bottom of a 9X13 baking dish. Sprinkle with salt and pepper and then a layer of mozzarella cheese. Top with the stuffing mixture.
- Bake 30 minutes or until chicken is cooked through (at least 165 degrees F). Enjoy!
