Bruschetta Chicken Bake combines all the flavors of fresh Bruschetta with hearty stuffing and perfectly sized melty mozzarella chicken bites!
Bruschetta is packed full of ripe Roma tomatoes, fresh garlic, basil and just a hint of Balsamic vinegar.
This easy weeknight recipe combines Bruschetta, boxed stuffing, bite sized chicken pieces and mozzarella to create a delicious one pan meal that everyone loves!
What You’ll Need to make Easy Weeknight Bruschetta Chicken Bake
- Roma Tomatoes – 2 medium sized, diced.Roma tomatoes are the firmest of the tomatoes. Cherry tomatoes or grape tomatoes may be substituted.
- Fresh Garlic – 2 teaspoons of minced garlic (2 cloves). You can substitute garlic paste or chopped garlic, but for this recipe, fresh is best.
- Basil – 1 tablespoon chopped fresh basil or use 1 teaspoon of dried.
- Olive Oil – We use extra virgin olive oil but any olive oil, avocado oil, vegetable oil or canola oil may be used for this recipe.
- Balsamic Vinegar – Used to enhance the flavor of the Bruschetta, this adds sweetness and a little acidity.
- Chicken – We use 3-4 boneless, skinless chicken breasts cut into bite sized pieces.
- Cheese – 1 cup shredded mozzarella cheese.
- Stuffing – We use one 6 ounce package of boxed stuffing mix, any brand
How to make Easy Weeknight Bruschetta Chicken Bake
With a busy family on the go, quick and easy weeknight dinners are key. This recipe uses Bruschetta to hit all the right flavor notes. The Bruschetta can even be leftover or made ahead of time.
This is a delicious one pan chicken and stuffing comfort meal with big bold flavors – perfect for a rainy day or as a quick weeknight family meal!
Make Bruschetta by combining all Bruschetta ingredients in a small bowl.
Stir until well combined. Cover and set aside.
Please Note: Making the Bruschetta portion of this recipe a day ahead or even an hour ahead allows the flavors to really develop. While we do recommend the rest time, it is optional!
Cut the chicken breasts into bite sized pieces and spread into one even layer on the bottom of a 9×13 baking dish.
Season with salt and pepper.
Spread the shredded mozzarella in an even layer over the chicken pieces.
Preheat the oven to 400 degrees F.
Place Bruschetta in a medium bowl and combine with stuffing mix and 1 cup of water.
Stir until combined and moistened.
Spread the stuffing and Bruschetta mixture evenly over the top.
Bake for 30 minutes in preheated oven until chicken is no longer pink and is cooked through. (165 degrees F). Serve immediately. Enjoy!

- Combine Bruschetta ingredients in a small bowl. If possible, cover and allow to rest in the refrigerator for at least 1 hour to overnight.
- Preheat oven to 400 degrees F.
- Place Bruschetta in a medium bowl and combine with Stove Top stuffing mix and 1 cup of water. Stir until combined and moistened. Set aside.
- Cut the chicken breasts into bite sized pieces and spread into one even layer on the bottom of a 9×13 baking dish.
- Season with salt and pepper and then spread the shredded mozzarella in an even layer over the chicken pieces.
- Top with the Bruschetta stuffing mixture.
- Bake for 30 minutes in preheated oven until chicken is no longer pink and is cooked through. (165 degrees F). Serve immediately. Enjoy!
