Italian sausages baked on a bed of deliciously seasoned peppers and onions. One Pan Sausage & Peppers is a simple and tasty weeknight meal!

Some of our favorite weeknight meals are created with only one pan. Flavorful, quick and easy to prepare, they are just the type of meals that a busy family needs. Delicious, easy, and as a bonus, also Keto AND Gluten Free.

Any type of sausages may be used but Italian sausages are our go-to. Peppers and onions are tossed in a quick Dijon mustard vinaigrette before cooking and the flavors that develop while the vegetables cook are perfectly complimentary to the roasted sausages!

Ingredients for One Pan Sausage & Peppers

What You’ll Need to make One Pan Sausage & Peppers

  • Olive Oil – We use extra virgin olive oil but any olive oil, avocado oil, vegetable oil or canola oil may be used for this recipe.

  • Garlic – 3-4 cloves minced. You can substitute garlic paste, chopped garlic, or in a pinch, use 3/4 teaspoon of garlic powder.

  • Dijon Mustard – Mustard with a deeper flavor due to the blend of mustard seeds used, white wine and spices. Yellow mustard, honey mustard or spicy mustard may be substituted.

  • Pantry Spices – Kosher salt & ground black pepper.

  • Onion – One medium sized, peeled and cut into strips. 1-2 cups.

  • Bell Peppers – 2-3 medium sized (any color) cut into strips. 2-3 cups.

  • Italian Sausages – 5 to 10 Italian sausages, hot, sweet or mild, or Bratwurst.

How to Make One Pan Sausage & Peppers

The recipe is a great weeknight meal. It is easy and tasty and can be served as a family dinner as is or on hoagie buns to make sandwiches. It’s pretty versatile and there’s not a lot of ingredients.

Over the years we have adjusted this recipe from one pack of Italian sausages to two because as the kids have grown up, they started to eat more. The number of sausages you choose to use is completely up to you. Make as many or as few as you want to suit your needs!

Preheat the oven to 400 degrees F and lightly spray a baking sheet with cooking spray. Set aside.

Ingredients for Dijon vinaigrette in a bowl prior to mixing.

In a medium bowl, combine olive oil, minced garlic, Dijon mustard, kosher salt and black pepper.

Whisk together until well combined.

Peppers and onions on the baking sheet with Dijon vinaigrette being poured over the top.

Spread the peppers and onions out onto the prepared sheet pan. Pour the Dijon vinaigrette over the vegetables and toss to combine.

Bake for 30-40 minutes, stirring the veggies and turning sausages halfway through the cooking time.

Dinner is ready when the sausages are cooked through to an internal temperature of 160 degrees F.

Ingredients

  • 3 tbsp olive oil
  • 3-4 cloves garlic minced
  • 2 tsp Dijon mustard
  • 1 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 medium onion peeled and cut into strips
  • 2-3 medium sized peppers (any color) cut into strips
  • 5-10 Italian sausages or Bratwurst

  • Lightly grease a baking sheet with cooking spray.

  • Spread the peppers and onions out onto the prepared sheet pan. Pour the Dijon vinaigrette over the vegetables and toss to combine.
  • Spread onions and peppers out evenly on the baking sheet and lay the sausages on top.
  • Bake for 30-40 minutes, stirring the veggies and turning sausages halfway through the cooking time.
  • Dinner is ready when the sausages are cooked through to an internal temperature of 160 degrees F. Serve immediately. Enjoy!
