Ready in less than ten minutes, Quick Broiled Tomato Toasties are a family favorite for lunch or an anytime snack. Quick and easy comfort food!

Sometimes the simplest things are the best. Quick Broiled Tomato Toasties are something that my family has been making for years. Open faced grilled cheese and tomato sandwiches that are just the right size.

No matter if you make yourself a couple for a snack or feed a crowd for lunch, this simple and easy recipe is delicious!

Ingredients for Broiled Tomato Toasties.

What you’ll need to make Quick Broiled Tomato Toasties

  • Sliced Bread – White or wheat, We use grocery store bread for convenience but any sliced bread may be used.

  • American Cheese Slices – For convenience and great results, we use American cheese. Some other substitutions include Cheddar, Swiss, Provolone, Monterey Jack, or Havarti.

  • Tomato – We love to use Roma tomatoes for these because of their meaty texture and lower moisture content. Beefsteak tomatoes also work well.

  • Onion – We typically use chopped yellow onions but white onions, sweet onions, red onions, or even shallots may be used instead.

  • Salt & Pepper – We prefer the combination of kosher salt and fresh ground pepper but use whatever you have!

How to make Quick Broiled Tomato Toasties

Quick and easy recipes are always a good thing to have. This recipe is great as a snack but is also able to feed a lot of people in a short period of time.

A lightly toasted slice of bread topped with melty cheese, broiled fresh tomato and chopped onion, these are ready in less than ten minutes and are absolutely delicious!

Set the oven to broil (500 degrees F) and adjust the rack to the second position from the top.

On a large baking sheet, lay out the bread slices. Top each one with a piece of American cheese and set aside.

Wash and slice the tomato into at least 8 slices and chop 1/4 cup of onion.

Sprinkle about half of the onion over the cheese slices.

Top each cheese slice with a slice of tomato then divide the remainder of the chopped onion evenly over the slices. Sprinkle to taste with salt & pepper.

Place the baking sheet into the oven under the preheated broiler for about 5 minutes until the bread has toasted slightly and the cheese is melty and the edges have started to brown.

Remove from oven and serve immediately. Enjoy!

    My mom would make that for us. A lot! Two tablespoons of tomato soup on top. I don’t miss being hungry! LOL
