Flavorful and protein packed, Muffin Tin Breakfast Bites are a great grab and go breakfast or anytime snack packed full of veggies, meat, cheese and eggs. Simple, delicious and great for on the go!

When you have a busy family on the go, it’s great to have some healthier snacks available to eat on the way. Muffin Tin Breakfast Bites are delicious and portable, can be made ahead of time (even frozen) and are cheaper and better for you than most traditional prepackaged breakfast options!

What you’ll need to make Muffin Tin Breakfast Bites

  • Chopped assorted veggies
  • Diced onion
  • Cooked and chopped sausage, bacon, ham or combination
  • Shredded cheese
  • Eggs
  • Milk
  • Garlic powder
  • Dry mustard powder
  • Salt & pepper
  • Parsley
  • Cayenne (optional)

How to make Muffin Tin Breakfast Bites

Flavorful and protein packed, Muffin Tin Breakfast Bites are a protein packed grab and go breakfast or snack. Full of veggies, meat, cheese and eggs they are simple, delicious and great for when you’re on the go!

Preheat oven to 350 degrees F. Spray a 12 count muffin tin with cooking spray and set aside.

Divide the veggies, onion, meat and shredded cheese evenly between the muffin tins.

Muffin Tin Breakfast Bites are completely customizable to your taste.

The recipe calls for 2 cups of chopped veggies + 1 cup of chopped meat but you can adjust to make any combination or amount to equal three cups of total add ins. Use what you have!

    Eggs, milk and seasonings in a large measuring cup

    In a medium bowl or a large measuring cup, combine eggs, milk and seasonings. Whisk well  to combine.

    Divide between muffin tins, making each about 3/4 full.

    There may not seem like there is enough egg in each muffin tin but they will poof up while cooking.

    Cook 18-23 minutes on middle rack of the oven until cooked through and slightly browned. 

    Baked Muffin Tin Breakfast Bites

    Remove and allow to rest in muffin tins for 5 additional minutes.

    Run a knife around the outside to loosen before removing. Serve immediately or allow to cool and freeze for another time.  Enjoy!

    • 1 cup sausage, bacon or any combination chopped
    • 1/2 cup shredded cheese
    • 7 large eggs
    • 1/4 cup milk
    • 1 tsp garlic powder
    • 1/2 tsp dry mustard powder
    • 1/2 tsp salt
    • 1/2 tsp pepper
    • 1/2 tsp dried parsley
    • 1/4 tsp cayenne optional
