A light and zingy marinade pulls the flavors of summer together in this delicious Cucumber, Tomato and Onion Marinated Salad. One of our favorite simple side dishes!

Cucumber, Tomato and Onion Marinated Salad is a versatile and super easy side dish that is perfect for a picnic, potluck or BBQ. Light and zesty, the marinated vegetables are a compliment to pretty much anything.

Customize this salad by adding mozzarella cheese, fresh basil, or even hot peppers. Be sure to allow at least two hours of marinating time (up to overnight) to really allow the flavors to develop!

Ingredients to make Cucumber, Tomato and Onion Marinated Salad.

What you’ll need to make Cucumber, Tomato and Onion Marinated Salad

  • Cucumbers – 2-3 medium regular cucumbers, peeled and cut into slices or bite sized chunks. English cucumbers or pickling cucumbers may be substituted.

  • Tomatoes – 2-3 ripe, medium sized tomatoes, regular or Roma, cut into bite sized pieces or wedges.

  • Onion – Small yellow, white, or red onion, cut into thin wedges and separated.

  • Vinegar – We use both white vinegar and apple cider vinegar in this salad. The combination of the two different flavors adds a complexity of flavor. Substitutions for the apple cider vinegar include rice wine vinegar, white wine vinegar, or red wine vinegar. Feel free to get creative with herb or fruit vinegars as well!

  • Dill – Dried or fresh may be used. Instead of dill, you can try parsley, thyme, tarragon, or fennel.

  • Pantry Staples – White sugar, salt, ground black pepper.

How to make Cucumber, Tomato and Onion Marinated Salad

A light and zingy marinade pulls the flavors of summer together in this delicious Cucumber marinated salad. One of our summer favorites, this quick and easy side dish goes with pretty much everything!

Cucumber, tomato and onion cut into bite sized pieces.

Wash and prepare cucumbers, tomatoes and onions and set aside.

The marinade ingredients in a small bowl with a whisk.

In a large bowl combine water, white vinegar, apple cider vinegar, sugar, salt, black pepper and dried dill. Whisk until sugar has dissolved.

Pouring the marinade over the vegetables in a bowl.

Add the prepared cucumbers, tomatoes and onions to the vinegar mixture and stir to coat. Cover and allow to rest in the refrigerator for at least two hours, preferably more. Stir just before serving. Enjoy!

Ingredients

  • 2-3 medium cucumbers peeled and cut into slices or chunks
  • 2-3 medium tomatoes cut into chunks or wedges
  • 1 small onion cut into wedges and separated
  • 1 cup water
  • 1/3 cup white vinegar
  • 1/3 cup apple cider vinegar
  • 1/4 cup sugar
  • 2 tsp salt
  • 1/2 tbsp ground black pepper
  • 1 tsp dried dill

    Been making variations on this great summer salad since I was a kid. I used all white vinegar (didn’t have any cider vinegar around) and used English Cucumbers to add some extra green to the salad.. Roma tomatoes (of course). I always add the dill. Perfect! This is a great marinade for this type of salad so look no further and enjoy.

      Thank you for your comments James! I also have been making variations from a very young age. As part of a French Canadian family I seem to have to put vinegar on everything!

    I have been looking for years for a recipe like this one. Nothing ever tasted right. I finally found it. I love this recipe. I put it over salad with the juice. Perfect. Or it can be eaten by itself. I love it.
