Method
- Create simple syrup by adding 1/2 cup sugar and 1/2 cup water to a small saucepan and stirring. Bring to a boil over medium-high heat until mixture is clear (about 3 minutes). Allow to cool.
- Using a knife, remove the rind and white parts from the mini watermelon and discard. Cut the watermelon into small chunks.
- Process the watermelon chunks in a food processor or a blender until mostly smooth.
- Strain the watermelon juice through a wire mesh strainer to remove pulp and any seed parts.
- Combine the strained watermelon juice, simple syrup, and lime juice and then pour the mixture into the bowl of the ice cream maker.
- Process according to manufacturer's directions until the mixture has thickened to at least a milkshake consistency.
- Remove to a container, cover and freeze for at least 2 hours until set. Serve and enjoy!
