I think if you would have told me that I would be eating some of the things that I have tried while supporting my husband on his Keto journey I would have argued with you. After all, I am not following the diet. I LOVE carbs of every kind, especially bread. But I will admit that Keto food overall is surprisingly good, and Roasted Radishes are totally worth trying!
When I found this recipe in a Keto cookbook I was a little intrigued. Potatoes are too high in carbs to be enjoyed when you’re on Keto and Roasted Radishes seemed like they had good potential, but I thought the radish flavor might be too much. The act of roasting the radishes mellows the flavor and they are juicy, creamy and unexpectedly delicious!
How to make Roasted Radishes
As far as recipes go, this one is pretty simple. Preheat the oven to 375 degrees F.
Clean a pound of radishes and either cut them in half or in quarters (if they’re big). The bigger they are, the longer they take to cook. Radishes have pretty much the same density of potatoes so if the pieces are no more than 3/4 of an inch thick, they will cook a lot faster.
Place the radishes into a medium bowl, add 2 tablespoons of melted butter, garlic powder, parsley, oregano, and black pepper and stir until well coated.
Spread the coated radishes out onto a small ungreased baking sheet or into a small glass baking pan. The darker the pan, the better the browning! I also like to put them cut side down so that they get browned on the cut sides – not necessary but effective!
Place the pan into the preheated oven and cook for 10 minutes.
Remove from the oven, stir the radishes and then return to the oven and cook for at least another 7 minutes. The radishes are ready when they are softened and browned. If they don’t seem like they are softened enough, put them back in and let them cook a little longer.
Remove from oven and serve immediately. These are simple, flavorful and an absolutely delicious change of pace for a dinner side. Keto or not, these are worth trying. You might just be as pleasantly surprised as I was. Enjoy!

Roasted Radishes (Keto)
Ingredients
- 1 pound radishes cleaned and cut in halves or quarters
- 2 tbsp butter melted
- 1/2 tsp garlic powder
- 1/2 tsp dried parsley
- 1/4 tsp dried oregano
- 1/4 tsp ground black pepper
- 1/8 tsp salt
Instructions
- Preheat the oven to 375 degrees F.
- In a medium bowl place radishes, melted butter, garlic powder, parsley, oregano, black pepper and salt. Stir until all are well coated.
- Spread out evenly onto a small baking sheet and cook for 12-20 minutes, stirring once.
