Tender crisp Brussels sprouts tossed in Parmesan cheese and garlic and oven roasted. Simple and delicious!

While there’s a lot of people that think they won’t like them, Brussels sprouts can be really tasty when cooked properly.

This simple recipe wraps the Brussels sprouts in flavor and roasting them in the oven keeps them from getting soggy. Easy and delicious, this recipe is a keeper!

Why should you eat Brussels Sprouts?

Well, most importantly, they are good for you!

  • Brussels sprouts are like little cabbages. They are packed with nutrients and anti-oxidants, high in fiber, Vitamin C and Vitamin K.

  • Brussels sprouts are one of the best plant sources of omega-3 fatty acids and they may also come with added health benefits, including the potential to reduce the risk of cancer, decrease inflammation and improve blood sugar control.

  • They are very underrated, mostly because they have a reputation for not tasting good. This recipe is one of many that proves they can be delicious.

What You’ll Need to Make Roasted Parmesan Brussels Sprouts

  • Brussels Sprouts – 2 pounds, washed, cleaned of any damaged leaves and cut in half.

  • Garlic – 3-4 cloves, about 2 teaspoons, coarsely chopped. You can substitute sliced garlic, garlic paste, minced garlic, or in a pinch, use 1/2 teaspoon of garlic powder.

  • Parmesan Cheese – 1/2 cup grated Parmesan cheese. Fresh grated or “green shaker Parmesan” can be used for this recipe.

  • Olive Oil – We use extra virgin olive oil but any olive oil, avocado oil, vegetable oil or canola oil may be used for this recipe.

  • Pantry Seasonings – Kosher salt & ground black pepper.

How to Make Roasted Parmesan Brussels Sprouts

This simple recipe wraps the Brussels sprouts in flavor and roasting them in the oven keeps them from getting soggy. This method of cooking is easy and the Brussels sprouts are delicious!

Preheat the oven to 400 degrees F.

Clean the Brussels sprouts and cut in half. Set aside.

Mix of Parmesan cheese and seasonings for the Brussels sprouts coating in a bowl prior to mixing.

In a large bowl, combine sliced garlic, Parmesan cheese, olive oil, kosher salt and pepper.

You can use ANY grated Parmesan for this – even the “green shaker Parm” works great!

Stir well to combine. It will make a thick paste.

Up close Brussels Sprouts after being tossed in the Parmesan cheese mixture.

Add the prepared Brussels sprouts to the Parmesan mixture and toss until well coated.

Spread the coated Brussels sprouts out in a 9×13 glass baking dish.

For best results, flip as many as you can flat side down.

Roast in the preheated 400 degree F oven for 20-25 minutes, stirring once, until the Brussels sprouts are crisp tender.

Serve immediately. Enjoy!

  • 1-2 pounds Brussels sprouts cleaned, cut in half
  • 3-4 cloves garlic chopped
  • 1/2 cup grated Parmesan cheese
  • 3 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp ground black pepper

  1. Preheat oven to 400 degrees F.
  2. Prepare the Brussels sprouts by washing them, peeling off any damaged leaves and cut in half. Set aside.
  3. In a large bowl mix together chopped garlic, Parmesan cheese, olive oil, kosher salt and pepper until well combined.
  4. Add the Brussels sprouts to the bowl and toss until sprouts are well coated.
  5. Evenly spread the Brussels sprouts in a 9×13 baking dish. For best results, flip as many as you can flat side down.
  6. Roast in the preheated 400 degree F oven for 20-25 minutes, stirring once, until the Brussels sprouts are crisp tender. Serve immediately. Enjoy!
