Most people either love Brussels sprouts or they hate them entirely. There is not usually any in between. I am lucky because I fall in the first category. I never had them forced on me as a kid, never had to eat boiled, bland, boring Brussels sprouts that ruined them for me forever. Unfortunately, many people grew up in that world and they don’t know that if cooked properly, Brussels sprouts are delicious!
This recipe for Roasted Parmesan Brussels Sprouts is a pretty simple one but it is flavorful enough that your family will not even notice that they’re eating Brussels sprouts. As a bonus, these are a perfect Keto-friendly side dish!

Brussels sprouts are like little cabbages. They are packed with nutrients and anti-oxidants, high in fiber, Vitamin C and Vitamin K. Brussels sprouts are one of the best plant sources of omega-3 fatty acids and they may also come with added health benefits, including the potential to reduce the risk of cancer, decrease inflammation and improve blood sugar control. They are very underrated, mostly because they have a bad reputation for not tasting good. This recipe is one of many that proves they can be delicious.
How to Make Roasted Parmesan Brussels Sprouts
Preheat the oven to 400 degrees F.
Clean the Brussels sprouts and cut in half. Set aside.
In a large bowl, combine sliced garlic, Parmesan cheese, olive oil, kosher salt and pepper. You can use ANY grated Parmesan for this – even the “green shaker Parm” as it is known in my house!
Stir well to combine. It will make a thick paste.
Add the prepared Brussels sprouts to the Parmesan mixture and toss until well coated.
Spread the coated Brussels sprouts out in a 9×13 glass baking dish.
Roast in the preheated 400 degree F oven for 20-25 minutes, stirring once, until the Brussels sprouts are crisp tender. Serve immediately. Enjoy!

- 2 pounds Brussels sprouts Cleaned and cut in half
- 3-4 cloves garlic thinly sliced
- 1/2 cup grated Parmesan cheese
- 3 tbsp olive oil
