Ingredients and Variations
ZUCCHINI – small zucchini are the easiest to use for this recipe and you’ll want to cut off the ends but there is no need to peel them. The skins are actually really good for you! You can use large zucchini as well – just remove the seeds and discard then cut the zucchini into bite sized pieces.
SEASONINGS –
Garlic powder is used in this recipe for convenience. Fresh garlic, peeled and minced can be used instead and it is totally delicious!
Italian seasoning is great if you have it but if you don’t, you can substitute oregano leaves with a shake of thyme leaves (if you have them) and end up with the same result.
While fresh lemon is always the best, bottled lemon juice will work just as well. Don’t skip it – the addition of the acid adds the perfect hint of bright an sunny flavor.
