Italian seasoning, a hint of garlic and a burst of fresh lemon surround crisp tender bites of zucchini in this Simple Sauteed Zucchini with Lemon. A great healthy side dish!

With summer just around the corner our family will soon be enjoying all of the fresh from the garden produce that we can get our hands on. One of our favorite vegetables is fresh garden zucchini.

Cooked in a pan and sauteed with a little lemon. this versatile side dish offers tons of flavor with very little effort!

What You’ll Need to make Simple Sauteed Zucchini with Lemon

  • Zucchini – small zucchini are the easiest to use for this recipe and you’ll want to cut off the ends but there is no need to peel them. The skins are actually really good for you! If using large zucchini, remove the seeds and discard and then cut the zucchini into bite sized pieces.

  • Garlic powder – A convenient pantry spice, but a clove of fresh garlic, peeled and minced can be used instead and it is totally delicious!

  • Italian Seasoning – A convenient pre-mix of spices but if you don’t have any you can substitute half basil leaves, half oregano leaves and a shake of thyme leaves (optional) and end up with the same result.

  • Lemon – While fresh lemon is always the best, bottled lemon juice will work just as well. Don’t skip it – the addition of the acid adds the perfect hint of bright an sunny flavor.

How to make Simple SauteED Zucchini with Lemon

Quick and easy side dishes are a great thing. This one is a summer favorite.

Ready in under 10 minutes, this can be made quickly before dinner and is versatile enough to be paired with just about anything!

Wash and cut the zucchini into bite sized pieces. If using large zucchini, you may wish to remove some of the seeds.

Melt butter in a medium skillet over medium-high heat.

Add zucchini, garlic powder, Italian seasoning and salt & pepper.

Cook, stirring occasionally for 4-5 minutes until crisp tender.

Add lemon juice to the zucchini and cook an additional 30 seconds until heated through.

Remove from heat and serve immediately. Enjoy!

Ingredients

  • 1 tbsp butter
  • 4 small zucchini cut into bite sized pieces
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • salt & pepper to taste
  • 1/2 small lemon about 1 tbsp
