Chewy Chocolate Peanut Toffee is a no-bake throwback recipe featuring chewy dark toffee, crisp salty peanuts, and just a hint of chocolate.
We love this time of year with all of the special holiday treats! There may be more sugar used in our house in this one month than there is in all the others combined!
This recipe came to us from one of our favorite Aunties. It was passed to her by a 90 year old lady who had made this recipe for years. Originally it was labelled as a brittle but it doesn’t break or shatter easily.
It’s more like the classic Canadian “Eat More” bar, sweet, chewy and peanutty… a delicious little one bite treat!

What you’ll need to make Chewy Chocolate Peanut Toffee
- Brown Sugar – We use light brown sugar. You can also use dark brown sugar for a deeper, richer flavor.
- Butter – We use regular salted butter, but unsalted butter may also be used.
- Corn Syrup – We use light corn syrup for this recipe. Dark corn syrup can be used but it does contain molasses so the color and flavor may differ if used.
- Half and Half – If you don’t have half and half, substitutions include half milk and half evaporated milk in an equal amount.
- Chocolate Chips – We recommend using milk chocolate chips but semisweet chocolate may also be used.
- Vanilla Extract – Adds flavor and enhances other flavors.
- Peanuts – We love the crispness and the flavor of salted dry roasted peanuts in this toffee. Plain peanuts may be substituted if you prefer.
How to make Chewy Chocolate Peanut Toffee
Another fantastic holiday treat, Chewy Chocolate Peanut Toffee is sweet, chewy and peanutty… a delicious little one bite treat that is perfect for sharing.
Line a medium sized baking sheet with parchment paper and then spray the parchment with cooking spray. Set aside.
In a large heavy bottomed saucepan or dutch oven, stir together brown sugar, melted butter, corn syrup and half & half until well combined.

Heat over medium heat until the mixture begins to bubble, stirring occasionally.
Place the chocolate chips in a microwave safe bowl and cook for one minute until softened and slightly melted.
Add into the bubbling mixture and stir in until completely melted.
Add a candy thermometer to the pot and cook the mixture, stirring occasionally, until it reaches the hard ball stage (250 – 260 degrees F).
This may take quite a while and the mixture will visibly change and thicken during the process.

Remove from the heat and add vanilla extract and peanuts.

Stir until the peanuts are well distributed.

Spread mixture evenly on prepared baking sheet. Move to the refrigerator and allow to cool for an hour or until the toffee layer has become hardened.

Using a knife, break into bite sized pieces.

Serve immediately. Store in an air tight container or package in small plastic bags to share. Enjoy!
