How to make Chocolate Covered Cherry Cookies
Holiday baking is an annual tradition of many people – myself included! It always amazes me that I do more baking in one month than I do the rest of the year.
These Chocolate Covered Cherry Cookies are a new addition to my holiday baking, having been given the recipe by a trusted friend who makes them every year. A new favorite in this house for sure!
Preheat oven to 350° F. In the bowl of a stand mixer or using a hand mixer, on low speed, cream butter and sugar until light and fluffy, about 5 minutes.
Add the egg and vanilla and mix until incorporated.
In a small bowl, combine the flour, cocoa, salt, baking powder and baking soda until well blended.
Gradually add the dry mixture to the mixture in the bowl of the stand mixer until incorporated. Dough will pull away from the sides of the bowl.
Roll the dough into 24 – 1 inch balls and divide them between two ungreased baking sheets.
Make a divot in each ball with your finger and then push 1 cherry halfway into each ball.
Bake for 11-13 minutes, just until set, then remove from oven and allow to cool on racks.
To make the frosting, add the chocolate chips and evaporated milk to a small saucepan. Heat over low heat, stirring constantly until smooth.
Add cherry juice and stir until completely incorporated.
Spoon the frosting over the top of each cookie, completely covering the cherry.
Sprinkle with holiday sprinkles if desired. Enjoy!
