Quick and easy meals are a must for a busy family. This non traditional Peanut Chicken bowl is packed with chicken, broccoli and noodles and the sauce is thick and flavorful. A great family friendly meal idea.

What You’ll Need to make Saucy Peanut Chicken Noodle Bowls

  • Noodles – We prefer regular spaghetti for this meal but thin spaghetti or Angel Hair pasta are also great choices.

  • Olive Oil – We use extra virgin olive oil but any olive oil, avocado oil, vegetable oil or canola oil may be used for this recipe.

  • Chicken Breast – Boneless, skinless chicken breast, cut into thin strips or bite sized pieces. Boneless, skinless chicken thighs may also be used.

  • Broccoli – Bite sized broccoli florets, either fresh or frozen.

  • Asian Toasted Sesame Salad Dressing – We typically buy the Kraft version but any Asian Sesame or Sesame Ginger will work in this meal.

  • Peanut Butter – We prefer to use creamy peanut butter at room temperature for easier incorporation into the peanut sauce mixture..

  • Soy Sauce – Low sodium or regular soy sauce may be used. Feel free to substitute coco aminos if you prefer.

  • Pantry Spices & Seasonings – Salt & pepper, garlic powder, ground ginger & red pepper flakes.

  • Optional Garnishes – Dry roasted peanuts, sliced green onions and sesame seeds.

How to Make Saucy Peanut Chicken Noodle Bowls

Family friendly and quick and easy are some of our favorite catchphrases for weeknight cooking.

These Saucy Peanut Noodle Bowls are packed full of good stuff wrapped in a delicious, totally non traditional peanut sauce. Your family is going to love these!

Spaghetti being added to a large pot of boiing water.

Generously salt a large pot of water and bring to a boil over high heat.

Add spaghetti noodles and cook per package directions, stirring occasionally.

Chicken strips in a skillet, generously seasoned with salt & pepper.

Meanwhile, in a large skillet, heat the olive oil over medium-high heat. Add the chicken breast strips to the skillet. Generously season with salt & pepper.

Cook chicken in the skillet until no longer pink, approximately 7-8 minutes, stirring occasionally.

Ingredients for easy peanut sauce in a small bowl, prior to mixing.

In a small bowl, combine Asian Toasted Sesame salad dressing, peanut butter, soy sauce, garlic powder, ground ginger, red pepper flakes and whisk until well combined.

Adding broccoli florets into the pasta water to quickly cook.

In the last 3 minutes of cooking time, add the broccoli florets to the boiling water and noodles. Stir.

Adding the easy peanut sauce to the chicken in the skillet.

Turn off heat and pour peanut sauce mixture over the cooked chicken in the skillet.

Stirring to coat the chicken in the peanut sauce.

Stir to coat and warm the sauce.

Spaghetti noodles and broccoli florets being drained in a colander.

Drain pasta and broccoli and divide between 4 serving bowls. Add peanut chicken and sauce over pasta in each of the bowls.

Garnish with peanuts, green onions and sesame seeds. Serve Immediately. Enjoy!

Ingredients

  • 8 oz uncooked spaghetti about 1/2 box
  • 1 tbsp olive oil
  • 1 pound chicken breast cut into thin strips
  • salt & pepper to taste
  • 3 cups broccoli florets fresh or frozen

Asian Peanut Sauce

  • 1 cup Asian Toasted Sesame salad dressing
  • 2 tbsp creamy peanut butter
  • 1 1/2 tbsp soy sauce
  • 1/2 tsp garlic powder
  • 1/2 tsp ground ginger
  • 1/4 tsp red pepper flakes

Garnishes (optional)

  • 1/4 cup dry roasted peanuts
  • 2 green onions sliced
  • 1 tsp sesame seeds
