Oven Roasted Sweet Potato Bites

With crispy caramelized edges and fluffy fork tender middles, Oven Roasted Sweet Potato Bites are a delicious (and good for you) side dish!

Sweet potatoes are packed full of antioxidants, fiber and vitamins and are a great vegetable to introduce to your family if you haven’t already.

There are so many different ways to enjoy them but tossing them in spices and roasting them in the oven is our favorite way to prepare them!

What You’ll Need to Make Oven Roasted Sweet Potato Bites

  • Sweet Potatoes – 2 large, about three cups when cut into pieces. We keep the skin on because it helps to keep the shape, has nutrients and extra fiber.

  • Olive Oil – We use extra virgin olive oil but any olive oil, avocado oil, vegetable oil or canola oil may be used for this recipe.

  • Pantry Seasonings – sea salt (or regular salt), ground black pepper, chili powder, paprika (or smoked paprika), cumin, garlic powder.

How to Make Oven Roasted Sweet Potato Bites

Sweet Potatoes are good for you. When you roast them in olive oil and spices, the outsides become caramelized and crispy while the insides are fluffy and flavorful.

These make a great side dish or afternoon snack. Super tasty and packed with vitamins and antioxidants!

Preheat oven to 450 degrees F.

Cut sweet potatoes into bite sized pieces, leaving skin on. Place into a medium bowl.

Add olive oil and toss to coat. Add all spices to the bowl and stir until well distributed.

Spread seasoned sweet potato bites onto a large baking sheet in a single layer.

Bake for 40 minutes on middle rack of the preheated oven.
