Oven Roasted Balsamic Brussels Sprouts are Tender crisp, wrapped in a simple mixture of Balsamic vinegar and garlic. Slow roasted and delicious!

Roasted Balsamic Brussels Sprouts are a simple but super flavorful veggie! Easy to assemble with pantry ingredients, they make for a delicious weeknight side dish that can slow roast while the other elements are being put together. As a bonus, they’re good for you too!

Brussels sprouts come with serious health benefits, including the potential to reduce the risk of cancer, decrease inflammation and improve blood sugar control.

They are very underrated, mostly because they have a bad reputation for not tasting good. This recipe is one of many that proves they can be delicious!

How to make Oven Roasted Balsamic Brussels Sprouts

Preheat oven to 400 degrees F.

Clean the Brussels sprouts and cut in half. Place in a large bowl.

To the bowl add olive oil, minced garlic, Balsamic vinegar, kosher salt and pepper.

Toss together until the ingredients are combined and the Brussels sprouts are well coated.

Place the coated Brussels sprouts in a 9×13 glass baking dish, cut side down.

Roast in the preheated 400 degree F oven for 25-30 minutes, stirring once, until the Brussels sprouts are cooked to crisp tender. Serve immediately. Enjoy!

  • 2 pounds Brussels sprouts cleaned and cut in half
  • 2 tbsp olive oil
  • 2-3 tsp minced garlic
  • 3 tbsp Balsamic vinegar
  • 1 tsp kosher salt
  • 1/4 tsp ground black pepper
