What You’ll Need to Make One Pot Lemon Chicken Orzo

  • Olive oil
  • Butter
  • Medium Onion
  • Fresh Garlic
  • Ground black pepper
  • Orzo Pasta
  • Chicken Broth
  • Medium Lemon
  • Heavy Cream
  • Leftover Rotisserie Chicken
  • Fresh Basil
  • Shredded Parmesan Cheese
  • Fresh Baby Spinach

How to Make One Pot Lemon Chicken Orzo

One Pot Lemon Chicken Orzo features tender orzo, shredded chicken and spinach in a creamy light lemon sauce. A delicious and easy weeknight meal. ready in less than 30 minutes

Olive oil, butter and onion in a dutch oven.

Place butter and olive oil in a medium dutch oven or large skillet and heat over medium-high heat.Add the chopped onion and cook until softened and slightly translucent, 4 – 5 minutes.

Add the garlic, ground black pepper, and orzo.

Slightly toasted orzo and other ingredients stirred together in a pot.

Stir well and cook for 2-3 minutes, stirring often until the orzo is slightly toasted.

Squeezing lemon into the pot with the broth and the heavy cream.

Add the chicken broth, cream, and lemon juice.

Bring to a bubble,then reduce the heat to medium.

Allow to simmer for 10 minutes, stirring occasionally.

Stir in the chicken and the fresh basil.

Adding spinach and Parmesan cheese to the pot.

Remove from the heat and add the spinach and shredded Parmesan cheese. Stir until just combined and cover. Allow to rest for about 5 minutes.

Ingredients

  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 medium onion chopped
  • 3 – 4 cloves garlic minced
  • 1/2 tsp ground black pepper
  • 1 1/2 cup orzo pasta uncooked
  • 3 cups chicken broth
  • 1 medium lemon, juiced about 3 tbsp
  • 1 cup heavy cream
  • 2 cups cooked rotisserie chicken
  • t tbsp fresh basil chopped
  • 1/2 cup shredded Parmesan cheese
  • 2 cups packed fresh baby spinach
  • Salt & pepper to taste

Instructions
