Method
- Preheat oven to 350 degrees F.
- Spray a 12 cup muffin tin with cooking spray and set aside.
- Divide the chopped veggies, onion, meat and shredded cheese evenly between the muffin tins.
- In a medium bowl or a large measuring cup, combine eggs, milk and seasonings. Whisk well to combine.
- Divide between muffin tins, making each about 3/4 full.
- Cook 18-23 minutes on middle rack of the oven until cooked through and slightly browned.
- Remove and allow to rest in muffin tins for 5 additional minutes. Run a knife around the outside to loosen before removing. Serve immediately or allow to cool and freeze for another time. Enjoy!
