What you’ll need to make Honey Garlic Chicken Dinner
- Olive Oil – We use extra virgin olive oil but any olive oil, avocado oil, vegetable oil or canola oil may be used for this recipe.
- Chicken Thighs – We use boneless, skinless chicken thighs because they stay moist after browning and baking. Bone in chicken thighs may be substituted.
- Pantry Spices and Staples – Salt & pepper, Italian seasoning, chicken bouillon, red pepper flakes.
- Baby Potatoes – We use baby potatoes because they are delicious and perfect for this dish but any regular potatoes can be cut into chunks and used instead.
- Broccoli Florets – We use fresh broccoli for best results.
- Soy Sauce – Low sodium or regular soy sauce may be used. Feel free to substitute coco aminos if you prefer.
- Honey – If you don’t have honey you can substitute while sugar in an equal amount.
- Fresh Garlic – We use minced garlic but you can substitute garlic paste or chopped garlic, or in a pinch, use 1/2 teaspoon of garlic powder.
How to make Honey Garlic Chicken Dinner
This is a great weeknight dinner for the family. Juicy chicken thighs, bite sized baby potatoes and crisp broccoli baked in a flavorful sweet and tangy sauce. Easy and delicious!
Preheat oven to 400 degrees F with the rack in the middle. Generously season the chicken thighs with salt and pepper.
Heat 1 tablespoon olive oil in a medium skillet over medium-high heat. Add chicken and sear 5 minutes each side until slightly browned.
Meanwhile, in a medium sized measuring cup or small bowl, combine all of the honey garlic sauce ingredients and whisk to combine.
Cut the broccoli and potatoes into bite sized pieces. Set the broccoli aside for now.
Arrange the seared chicken in a 9×13 baking dish and top with the potatoes.
Pour half of honey garlic sauce over the top (about 1/2 cup) and cover the pan with foil.
Bake for 30 minutes, until the chicken is completely cooked through.
Remove the foil from the baking dish and add the broccoli. Stir the remaining half cup of the honey garlic sauce and then drizzle over the top.
Return the pan to the oven and cook, uncovered, for an additional 15 minutes.
Serve immediately, spooning a little bit of the pan sauce over the chicken, potatoes and broccoli. Enjoy!
