Air fryers can do a lot of things!. One of our favorites is to bake up a small batch of muffins when we only need a few or want a treat.
A simple batter recipe and a handful of blueberries sprinkled with a little raw sugar is the perfect combination to make six delicious blueberry muffins in the air fryer. No oven necessary!
How to make Decadent Air Fryer Blueberry Muffins
Using your air fryer to bake is not something that may come immediately to mind but it is simple and has delicious results. These blueberry muffins are moist and flavorful and really very similar to the ones sold at Starbucks.
This recipe makes six muffins. Using silicone baking cups makes cleanup quick and easy and they bake in less than 20 minutes. Perfect for when you just want something sweet.
In a medium bowl combine flour, sugar, baking powder and salt. Mix until well combined.
In a small bowl combine egg, milk, melted butter and vanilla extract. Whisk together until well combined.
Add the wet ingredients to the dry ingredients and stir just until blended.
Fold in the blueberries until mostly well distributed.
Preheat the air fryer to 380 degrees F for 5 minutes. While it is preheating, spray six silicone baking cups with cooking spray.
Spoon batter evenly into silicone baking cups and sprinkle with Turbinado sugar. This gives the top a nice crunchy texture.
This recipe is meant to make six muffins but since this little pan holds seven, I just put a little less in each one. You can also use regular silicone baking cups.
Place silicone baking cups into air fryer and cook at 380 degrees F for 18-20 minutes. Muffins are done when a toothpick inserted in to them comes out clean.
Every air fryer is different so this is a great way to make sure that they are cooked through.
Remove from air fryer and allow to cool then pop out and enjoy!
