An all in one Hearty Baked Breakfast Casserole packed full of Canadian bacon, bite sized sausage pieces and fluffy, cheesy eggs. A perfect weekend or holiday breakfast!

Breakfast casseroles are a great way to feed a group. This Hearty Baked Breakfast Casserole is simple to put together and can be baked ahead of time or left in the refrigerator overnight to bake in the morning.

We make this for holidays, weekends, and we even make it ahead of time and take it with us when we go camping. There’s a little bit of everything in this and as a breakfast main or a potluck addition, this is easy and delicious!

Ingredients for Hearty Breakfast Casserole prior to assembling.

What You’ll Need to make Hearty Baked Breakfast Casserole

  • Sandwich Bread – Whole wheat or white standard thickness sandwich bread, crusts removed and cut into bite sized squares.

  • Onion – Medium sized, finely chopped, Yellow or white onions are the best choice for this dish.

  • Canadian Bacon – You can substitute ham or cooked regular bacon if you prefer, about 3/4 cup total.

  • Breakfast Sausages – Maple flavor is our favorite but any flavor can be used. We use one standard 12 ounce package, about 1 1/2 cups.

  • Shredded Cheese – Typically we use shredded cheddar cheese but any cheese blend can be used.

  • Eggs – Large white or brown eggs. If using small eggs, add 2-3 extra.

  • Milk – We use whole milk in this recipe but 2% milk or half and half could be used instead.

  • Dry Mustard Powder – We love this ingredient but if you don’t have it, use 1 1/2 teaspoons of yellow mustard or Dijon mustard. This ingredient really adds something to this Hearty Baked Breakfast Casserole so don’t skip it!

How to make Hearty Baked Breakfast Casserole

Breakfast casseroles are a great way to feed a group. This Hearty Baked Breakfast Casserole is packed full of bacon, sausages, eggs and cheese and is simple to put together and impressive to serve.

Preheat the oven to 350 degrees F. Lightly spray a 9×13 baking dish with cooking spray and set aside.

Cut the crusts off of the sandwich bread and discard. Cut the bread into bite sized pieces and spread the bread cubes out in the bottom of the prepared baking dish.

Finely chop the onion and layer over the bread pieces in the baking dish.

Cook the breakfast sausages in a skillet over medium heat until slightly browned. Remove from the skillet, cut into bite sized pieces and evenly distribute in the baking dish.

Cut the Canadian bacon into bite sized pieces and cook in the same skillet until cooked through.

Remove from the skillet and layer over the other ingredients in the baking dish.

Evenly distribute the shredded cheese over the meats in the baking dish.

In a large bowl or measuring cup, add eggs and using a whisk, beat the eggs until frothy. Whisk in milk and dry mustard powder until completely incorporated.

Pour the egg mixture over the layered ingredients in the baking dish.

Pre baked Hearty Baked Breakfast Casserole in the oven on the rack, shot from the side.

Bake, uncovered, at 350 degrees F for 1 hour or until golden brown and set.

Allow to rest 5 minutes. Cut into pieces and serve immediately. Store any leftovers in the refrigerator. Enjoy!
