Simple and creamy, slow cooker Easy Weeknight White Chicken Chili is a delicious and satisfying family dinner!

So easy to put together, this white chicken chili is a great weeknight meal. The slow cooker does most of the work and dinner is ready whenever you are ready to eat.

This recipe is great when you have rotisserie chicken, leftover chicken, or pulled pork to use up. Any of them will work. The recipe is simple and the results are delicious!

What You’ll Need to Make Easy Weeknight White Chicken Chili

  • Onion – Yellow onion or white onion can be used. Any mild onion.

  • Olive Oil – Extra virgin olive oil, vegetable oil or canola oil are good options.

  • Garlic – Fresh garlic, 2-3 cloves, peeled and either minced or chopped.

  • Chicken Broth – Regular or low sodium may be used. The cartons of chicken broth they sell in the grocery store are typically four cups.

  • Diced Green Chilies – We use mild, from the 7 oz can. Feel free to use spicier if you prefer.

  • Pantry Spices – Cumin, paprika, oregano leaves, ground coriander, cayenne pepper (you can leave this out if you want), salt & pepper.

  • Cream Cheese – We use regular cream cheese, 8 oz, cut into cubes, but low fat cream cheese or Neufchatel cheese can be used instead and it tastes the same!

  • Corn – Fresh or frozen, at least 1 1/2 cups, more if you like.

  • White Cannellini Beans – 2 cans, 15 oz each, drained. Substitutions include great northern beans, red kidney beans, black beans, navy beans or even pinto beans.

  • Chicken – Rotisserie chicken, shredded chicken, chopped chicken or pulled pork can be used in this recipe.

  • Fresh Lime – juiced, about 2 tablespoons, bottled lime juice can be used instead.

  • Fresh Cilantro – 2 tablespoons, chopped, plus more for serving if desired.

  • Optional Toppings – Shredded cheese (any variety), avocado, crumbled tortilla chips, jalapenos.

How to Make Easy Weeknight White Chicken Chili

Easy slow cooker meals are great for families on the go and for busy weeknights. The only thing better is when you can create a great new meal with leftovers from other meals!

This white chicken chili is creamy and delicious and uses leftover shredded chicken, rotisserie chicken or any cooked chicken. It’s also great with leftover pulled pork. Easy to put together and ready when you want it, this is a new family favorite!

Heat olive oil in a large pot over medium-high heat. Add onion and cook for about 4 minutes until onion becomes softened and translucent.

Stir in minced garlic and cook until fragrant (about 30 seconds).

Add chicken broth, green chilies, cumin, paprika, oregano, coriander, cayenne pepper and salt and pepper. Bring the mixture to a boil then reduce heat to medium.

Simmer for about 15 minutes to bring the flavors together.

Beans and broth in the food processor being blended.

Set 1/4 cup of the broth aside and transfer the rest to the bowl of a slow cooker set to low.

Drain the beans and transfer one cup into a food processor. Add the reserved 1/4 cup broth from soup and process in the food processor until the mixture is nearly smooth.

Cut the cream cheese into pieces and add to the slow cooker along with corn, cannellini beans, and pureed beans. Stir to combine.

Cover and cook for 6-7 hours on low (or 3-4 hours on high), stirring occasionally.

Stirring in the meat, cilantro and lime juice into the white chili in the slow cooker.

About an hour before serving, stir in shredded chicken, lime juice and cilantro. Allow to heat through.
