Method
- Preheat oven to 350° F. In the bowl of a stand mixer or using a hand mixer, on low speed, cream butter and sugar until light and fluffy, about 5 minutes.
- Add the egg and vanilla and mix until incorporated.
- In a small bowl, combine the flour, cocoa, salt, baking powder and baking soda until well blended.
- Gradually add the dry mixture to the mixture in the bowl of the stand mixer until incorporated. Dough will pull away from the sides of the bowl.
- Roll the dough into 24 - 1 inch balls and divide them between two ungreased baking sheets.
- Make a divot in each ball with your finger and then push 1 cherry halfway into each ball. Bake for 11-13 minutes, just until set, then remove from oven and allow to cool on racks.
- To make the frosting, add the chocolate chips and evaporated milk to a small saucepan. Heat over low heat, stirring constantly until smooth.
- Add cherry juice and stir until completely incorporated.
- Spoon the frosting over the top of each cookie, completely covering the cherry. Sprinkle with holiday sprinkles if desired. Enjoy!
