Cheesy Potato Broccoli Pork Chop Bake is a delicious all in one family dinner of tender crisp broccoli and seasoned pork chops nestled into a creamy baked potato casserole.
If you have ever had hash brown casserole, or “funeral potatoes” as they are sometimes called, you probably know how good the baked mixture of soup, hash browns, sour cream and cheese can be as a side dish on its own.
Add broccoli and pork chops and the combination becomes Cheesy Potato Broccoli Pork Chop Bake – a delicious all in one weeknight meal!
What you’ll need to make This Easy Dinner
- Frozen Hash Brown Potatoes – shredded or diced, with or without onions and peppers.
- Condensed Cream of Celery Soup – the canned kind. Cream of mushroom or cream of chicken can be used instead if that is what you have in the cupboard,
- Milk – we use whole milk but 2% or even skim milk may be substituted.
- Shredded Cheddar Cheese – Any blend of shredded cheese will work for this. Some that we have tried include sharp cheddar, blends of shredded cheese, Colby Jack, and shredded Mozzarella.
- Onion – medium sized, yellow or white, peeled and chopped.
- Broccoli Florets – fresh or frozen, bite sized pieces.
- Pork Chops – 4-6 pork chips, 1-2 pounds. Boneless or bone in will work for this dish.If using thick, bone in chops, you may need to cook for longer. Be sure to check the temperature of the pork chops and make sure it is around 160 degrees F before serving.
- Pantry Staples – olive oil, garlic powder, and salt & pepper.
How to Make Cheesy Potato Broccoli Pork Chop Bake
All in one dinners are great for busy family weeknights. This combination of perfectly cooked pork chops, traditional hash brown casserole and fresh broccoli is a satisfying and well rounded family meal!
In a large bowl, combine frozen hash brown potatoes, cream of celery soup, sour cream, milk, shredded cheese and chopped onion. Stir well.
Once well combined, fold in broccoli florets. Spread mixture into the bottom of an ungreased 13 x 9 baking dish and set aside.
Preheat oven to 375 degrees F.
In a large skillet heat olive oil over medium heat. Season pork chops on both sides with garlic powder, salt and pepper. Brown the pork chops in the skillet for 3-5 minutes on each side.
Place browned pork chops evenly on top of potato mixture in 13 x 9 dish. The pork chops can overlap slightly if necessary.
Cook in preheated oven for 45 minutes until edges are bubbly and pork is no longer pink in the center.
Remove from oven and serve immediately. Enjoy!

Ingredients
- 1 bag frozen hash brown potatoes 16-20 oz
- 1 can cream of celery soup
- 1/2 cup sour cream
- 1/2 cup milk
- 1 cup shredded cheddar cheese
- 1 medium onion chopped
- 2 cups broccoli florets fresh or frozen
- 1 tbsp olive oil
- 4-6 pork chops
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 tsp garlic powder
