Weeknight Asian Dumpling Dinner is an easy and delicious casserole of frozen premade pork dumplings and fresh bok choy baked in a tasty sauce!

The combination of flavors and textures make Asian dinners a favorite in this house. And as an easy meal that comes together quickly, this weeknight dinner bake checks all the boxes.

Served over rice, the combination of frozen dumplings, fresh bok choy, Asian seasonings and pantry staples creates a delicious and satisfying family meal!

What You’ll Need to Make this Weeknight Asian Dumpling Dinner

For the Asian Dinner Casserole

  • Fresh Garlic – 2 teaspoons, about 4-5 cloves. You can substitute garlic paste, chopped garlic, or in a pinch, use 1 teaspoon of garlic powder.

  • Fresh Ginger – About a 1 inch piece, peeled and grated. You can substitute 1/4 teaspoon of ground ginger if you don’t have fresh.

  • Soy Sauce – Low sodium or regular soy sauce may be used. Feel free to substitute coco aminos if you prefer.

  • Rice Vinegar – This is less acidic and milder than other vinegars and has a slightly sweet and sour flavor. We typically use the seasoned variety.

  • Sesame Oil – Common in Asian dishes, a little goes a long way. This has a nutty and earthy taste.

  • Red Curry Paste – The base of many Asian dishes, this is a combination of red chilies, ginger, and lemongrass.

  • Coconut Cream – Made from coconut milk, this dairy free cream is thick and rich.

  • Bok Choy – A nutrient rich type of Chinese cabbage, it is green and leafy and mild flavored.

  • Frozen Asian Pork Dumplings – We like to use pork dumplings but chicken or vegetarian dumplings (or potstickers) may be used instead.

  • Cooked Rice – 1 1/2 cups of precooked rice. We use white rice, brown rice, or even Minute Rice..

Toppings

  • Cilantro – a great garnish, this adds a fresh, bright and peppery element to this dish.

  • Green Onions – Thinly sliced, 1/4 cup. This is typically about 2-3 green onions.

  • Sesame Seeds – We like these for garnish but they are completely optional. We like toasted sesame seeds the best.

  • Chili Crisp Oil – While completely optional, this chili infused oil adds a spicy and aromatic finishing touch to this dish.

How to make this easy Weeknight Asian Dumpling Dinner

With big flavors and little effort, this easy baked Asian dinner is delicious and satisfying, a perfect weeknight meal for a busy family.

Ingredients for the delicious Asian sauce the dinner casserole will be cooking in.

Preheat the oven to 375 degrees F.

In a large bowl, combine garlic, ginger, soy sauce, rice vinegar, sesame oil, curry paste, coconut milk, and water.

Whisk together until well combined.

Bok Choy being tossed in the delicious Asian sauce prior to baking.

Add chopped bok choy to the bowl and toss until well coated.

Topping the Asian dinner casserole with the frozen pork dumplings.

Remove from the bowl and spread evenly in the bottom of a 9×13 baking dish.

Top the bok choy with the frozen pork dumplings, leaving some space between them. Drizzle any remaining sauce from the bowl over the dumplings and then cover the casserole with foil.

Bake in the preheated oven until the dumplings are cooked through and the edges are bubbling, 40-45 minutes.
