Method
- Preheat the oven to 375 degrees F.
- In a large bowl, whisk together garlic, ginger, soy sauce, rice vinegar, sesame oil, curry paste, coconut milk, and water until well combined.
- Add chopped bok choy to the bowl and toss until well coated then remove from the bowl and spread evenly in the bottom of a 9x13 baking dish.
- Top the bok choy with the frozen pork dumplings, leaving some space between them. Drizzle any remaining sauce from the bowl over the dumplings and then cover the casserole with foil.
- Bake in the preheated oven until the dumplings are cooked through to an internal temperature of at least 165 degrees F, 40 - 45 minutes.
- Divide cooked rice between 4 serving plates and top with even portions of dumplings and bok choy.
- Top with sauce from the pan and sprinkle with cilantro, sliced green onions, and sesame seeds. Drizzle with chili crisp oil if desired. Serve immediately. Enjoy!
