Thanksgiving turkey leftovers are wonderful to have, but usually after a few days the appeal wears off and it’s time to get creative and use up what’s left.
Hearty and satisfying Turkey Noodle Casserole is a great way to do just that. Everybody loves this simple and easy comfort food and if there’s any left, it tastes even better the second day!
What you’ll need to make Turkey Noodle Casserole
- Leftover Cooked Turkey – 3 cups of leftover turkey, white or dark meat, cut into bite sized pieces.
- Condensed Cream of Mushroom Soup – 1 can, 10.5 ounces, any brand.
- Miracle Whip Salad Dressing – Regular or light, this adds a tangy zip to the casserole but an equal amount of regular or light mayonnaise can be used instead.
- Milk – We use whole milk but skim milk or 2% milk may be substituted.
- Celery – Chopped, fresh celery, adds flavor and gives the casserole a crisp textural element.
- Onion – We use a medium yellow onion, chopped, about a cup. Any variety of onion may be used.
- Cheese – Any variety of shredded cheddar cheese may be used. We prefer Sharp Cheddar or Cheddar Jack.
- Egg Noodles – Uncooked. Egg noodles absorb the sauce while they cook and don’t get mushy.
- Old Bay Seasoning – A delicious (and optional) blend of spices, sprinkled over the top just before baking. Paprika may be used instead.
