Toasted Macadamia Nut Lime Fudge

Toasted Macadamia Nut Lime Fudge is a delicious unexpected treat. Creamy, sweet, nutty and zesty, this simple to make fudge always gets rave reviews!

Fudge is one of my guilty pleasures. Making your own fudge is one of the easiest things that you can do, although most people don’t know it! The varieties of fudge are only limited by your own imagination. Small additions can lead to some fantastic flavors like in this Toasted Macadamia Nut Lime Fudge.

Pan toasted chopped macadamia nuts are wrapped in a creamy white chocolate base flecked with fresh lime zest and just a hint of fresh lime juice. The flavor combination is surprisingly good – an unexpected balance of sweet and sour in a perfect little bite!

What You’ll Need to Make Toasted Macadamia Nut Lime Fudge

  • White Chocolate Morsels – there are many kinds of white chocolate morsels, generic no-name brand to some really fancy well known expensive brands but for this recipe, any of them will work.

  • Sweetened Condensed Milk – Sweetened condensed milk is a necessary element of this fudge. It is important to note that evaporated milk is not the same.

  • Fresh Lime – Having a fresh lime for this recipe is important because zesting the lime and stirring the lime zest into the fudge is a really nice addition. However if you don’t have a fresh lime, you can use 1 1/2 tablespoons of bottled lime juice in place of the lime and the lime zest.

  • Chopped Macadamia Nuts – If Macadamia nuts are not available to you, cashews or pecans can be substituted, or you can leave them out completely. Also, instead of roasting on the stovetop, these can also be roasted in the oven on a foil lined baking sheet at 325 degrees for five minutes, stirring once until golden and fragrant.

How to Make Toasted Macadamia Nut Lime Fudge

This Toasted Macadamia Nut Lime Fudge is one of my favorite things to create when we are in the mood for something sweet. The lime zest makes the flavor just pop and the toasted macadamia nuts are a delicious and complimentary addition.

It’s so much fun to watch people taste it because the flavor is completely unexpected. One of the best fudge flavors out there!

Toasting Macadamia nuts in a small cast iron pan.

In a small skillet over medium-low heat, toast the Macadamia nuts for 5-7 minutes, stirring often until lightly browned and fragrant. Remove from heat and set aside until cooled.

Using a knife, finely chop the toasted Macadamia nuts then move to a small bowl and set aside.

Zesting and juicing a lime for the fudge.

Zest the lime and transfer the lime zest into a small bowl. Juice the lime and save the juice. Set both aside. Line an 8×8 or 9×9 pan with parchment paper.

Adding sweetened  condensed milk to the white morsels in a saucepan.

Heat a heavy bottomed saucepan over medium heat. Add the white chocolate morsels and the sweetened condensed milk. Stir to combine. Cook, stirring occasionally for 5-6 minutes until smooth.

Adding in lime zest and juice to the fudge mixture in the saucepan with a wooden spoon.

Remove from heat and stir in lime zest and lime juice until well blended.

Adding toasted Macadamia nuts into the saucepan fudge mixture.

Stir in toasted Macadamia nut pieces until they are well coated.

Spreading out the Toasted Macadamia Nut Lime Fudge into a pan lined with parchment paper.

Pour the mixture into the prepared pan and spread out evenly.

Chill in the refrigerator for two hours until firm.

Cut into small squares and enjoy!
