What You’ll Need to Make Sweet Slow Cooker Chicken Thighs
- Boneless Skinless Chicken Thighs – these stay moist and delicious in the slow cooker!
- Soy Sauce – low sodium or regular soy sauce may be used. Feel free to substitute coco aminos if you prefer. The flavor is the same, the product is allergy friendly, contains less salt and is a lot less expensive than soy sauce!
- Fresh Garlic – Substitute 1 1/2 teaspoons of garlic powder if you don’t have fresh.
- Fresh Ginger -Substitute 1 1/4 teaspoons of ground ginger if you don’t have fresh.
- Pantry Staples – honey, ketchup, cornstarch, dried oregano, red pepper flakes (optional).
- Sesame Seeds – optional but a great addition, especially when toasted!
How to Make Sweet Slow Cooker Chicken Thighs
We are big fans of slow cooker meals, especially on nights when it feels as if everyone is going in different directions. There is something just so satisfying about knowing dinner is already made, whenever you are ready for it. This is an easy weeknight meal.
Boneless, skinless chicken thighs are great for this recipe since they stay moist and tender, even after a long cook. Wrapped in a delicious soy, honey and ginger sauce, Sweet Slow Cooker Chicken Thighs are easy to put together, hearty and satisfying!
Arrange the chicken thighs in an even layer on the bottom of a 6 quart slow cooker.
In a small bowl or glass measuring cup, whisk together the honey, ketchup, soy sauce, oregano, red pepper flakes, chopped garlic and grated ginger.
Pour the sauce over the chicken in the slow cooker and cover.
Cook on low heat for 4-6 hours until the chicken is cooked through and tender.
Remove the chicken to a plate. In a small bowl or glass measuring cup, combine 2 tablespoons of cornstarch and 1/2 cup water.
Stir the cornstarch mixture into the sauce in the slow cooker and turn the heat up to high.
Return the chicken to the slow cooker with any accumulated juices.
Cover and cook for an additional 30 minutes until the sauce is bubbly and thickened.
Serve immediately, spoon additional sauce over the top of the chicken, and sprinkle with sesame seeds if desired. Enjoy!

- 6-8 boneless skinless chicken thighs 2 to 2 1/2 pounds
- 1/3 cup honey
- 1/3 cup ketchup
- 1/3 cup soy sauce
- 1/2 tsp dried oregano
- 1/4 tsp red pepper flakes
- 6 cloves garlic peeled and chopped
- 1 tbsp fresh ginger roughly 1 inch piece, peeled and grated
- 2 tbsp cornstarch
- 1/2 cup water
- 1 tsp sesame seeds optional
