Lightly seasoned fresh tomato slices topped with basil and Parmesan cheese then broiled until golden brown. A great side dish or a perfect Keto friendly lunch!

Parmesan & Basil Tomato Rounds are always the perfect side dish or snack, but they also make a great lunch if you just want something different. There is something about the combination of warm, melted cheese with aromatic fresh basil on a thick sliced tomato that just checks off all of the right boxes.

A simple dish that is easy to make, quick, delicious and Keto friendly!

How to make Parmesan & Basil Tomato Rounds

So easy and delicious, these are a great keto friendly snack or light lunch!

Parmesan & Basil Tomato Rounds

Preheat broiler to 500 degrees F. Slice the tomatoes into 1/4″ slices and arrange on the baking sheet.

Season the top side of the tomatoes generously with salt & pepper.

Using Easy Homemade Ranch Dip as a Salad Dressing

This dip makes a delicious salad dressing!

To use as a salad dressing, just thin a portion of it with a little milk or water and drizzle over salad.
Store leftovers in the refrigerator.

    Top each slice with a sprinkling of basil. Fresh is always the best if you have it. I like to roll up the leaves and slice it thinly, a technique called chiffonade but you can also chop it if you prefer.

    If you don’t have fresh basil you can generously sprinkle dried basil on the tomatoes instead.

    Add enough Parmesan to cover the top. The more you add, the longer it will take under the broiler. I try to use shredded Parmesan for this but you can also use grated Parmesan – the texture is just a little different but the idea is the same.

    Broil until the cheese is melted and bubbly. This depends on a lot of things so you want to be watching as you broil them.

    You can leave them until they are golden brown or stop when they are slightly melty – your choice.

    Remove from the oven and serve immediately. Drizzle them with a little balsamic vinegar if desired. Enjoy!

    Ingredients

    • 1 large Beefsteak tomato
    • Salt & pepper to taste
    • 10 fresh basil leaves, thinly sliced or 1/2 tbsp dried
    • 1 cup shredded Parmesan cheese
