Lightly seasoned fresh tomato slices topped with basil and Parmesan cheese then broiled until golden brown.

Parmesan & Basil Tomato Rounds are always a perfect side dish or snack, but they also make a great lunch if you just want something different.

There is something about the combination of warm, melted cheese with aromatic fresh basil on a thick sliced tomato that just checks off all of the right boxes.

A simple dish that is easy to make, quick, delicious and also low carb!

How to make Parmesan & Basil Tomato Rounds

So easy and delicious, these make a great low carb snack or light lunch!

Tomato Rounds sprinkled with salt and pepper and basil on a baking sheet.

Preheat broiler to 500 degrees F. Slice the tomatoes into 1/4″ slices and arrange on the baking sheet.

Season the top side of the tomatoes generously with salt & pepper.

Top each slice with a sprinkling of basil. Fresh is always the best if you have it. We like to roll up the basil leaves and slice them thinly, a technique called chiffonade but you can simply chop them if you prefer.

If you don’t have fresh basil you can generously sprinkle dried basil on the tomatoes instead.

Add enough Parmesan to each tomato to cover the top. The more you add, the longer it will take under the broiler. We prefer to use shredded Parmesan for this but you could substitute grated Parmesan – the texture is a little different but the idea is the same.

Broil until the cheese is melted and bubbly. The amount of time depends on many factors so keep an eye on them as you broil them.

You can broil until golden brown or stop once the cheese has become slightly melty – it’s your choice. Remove from the oven and serve immediately.

Drizzle them with a little balsamic vinegar if desired. Enjoy!

  • 10 fresh basil leaves, thinly sliced or 1/2 tbsp dried
  • 1 cup shredded Parmesan cheese
