Method
- Preheat oven to 400 degrees F with the rack in the middle. Generously season the chicken thighs with salt and pepper.
- Heat 1 tablespoon olive oil in a medium skillet over medium-high heat. Add chicken and sear 5 minutes each side until slightly browned.
- Meanwhile, in a medium sized measuring cup or small bowl, combine all of the honey garlic sauce ingredients and whisk to combine.
- Arrange the seared chicken in a 9×13 baking dish and top with the potatoes.
- Pour half of honey garlic sauce over the top (about 1/2 cup) and cover the pan with foil.
- Bake for 30 minutes, until the chicken is completely cooked through.
- Remove the foil from the baking dish and add the broccoli. Stir the remaining half cup of the honey garlic sauce and then drizzle over the top.
- Return the pan to the oven and cook, uncovered, for an additional 15 minutes.
- Serve immediately, drizzled with pan sauce. Enjoy!
