A delicious way to use up overripe bananas, Banana Blueberry Oat Bites are packed full of good stuff and make a great grab and go breakfast or snack cookie!

Bananas, fresh blueberries and just a hint of cinnamon, these are soft baked and hearty. Easy to make and simply delicious, your family won’t even realize that they are good for them!

Ingredients for Banana Blueberry Oat Bites.

What you’ll need to make Banana Blueberry Oat Bites

  • Bananas – ripe, browned and mushy bananas are the best for this recipe. If frozen, thaw completely before using.

  • Oats – we use old fashioned oats or rolled oats. Quick oats may also be used but the texture may be a bit different.

  • Brown Sugar – light brown or dark brown sugar, packed.

  • Spices – ground cinnamon and regular iodized table salt. You can substitute fine sea salt if you prefer.

  • Blueberries – fresh or frozen. If using frozen berries, do not thaw!

How to make Banana Blueberry Oat Bites

Banana Blueberry Oat Bites are packed full of good stuff and make a great grab and go breakfast or snack cookie. Easy to make and simply delicious, your family won’t even realize that they are good for them!

About Overripe Bananas…

There’s a strange phenomenon that occurs in our house. Everyone loves bananas and can not get enough of them until they suddenly stop eating them.

When the first brown spot appears, the bananas are declared inedible (and ignored forevermore) by the family. Seriously?

Good News! Overripe bananas don’t have to get thrown out. They can be transformed into some tasty treats like Banana Chocolate Mini Muffins or these delicious Banana Blueberry Oat Bites!

Preheat oven to 375 degrees F.

Line a baking sheet with parchment paper or a silicon baking mat.

In a medium bowl, mash the bananas until they are mostly smooth.

Add rolled oats, brown sugar, cinnamon and salt and stir the mixture until well blended.

Folding in the blueberries.

Fold in frozen blueberries.

The blueberries should be well distributed throughout the mixture.

Scoop oat bites into 12 equal portions on the prepared baking sheet using a large cookie scoop or tablespoon.

Place the oat bites into the preheated oven and cook for 13-15 minutes until firm. Allow to cool on cookie sheet.

Store in a container with a lid or a zip top bag. Enjoy!

  • 1 1/2 tsp ground cinnamon
  • 1 pinch salt
  • 1/3 cup fresh blueberries frozen
