Five Minute Cilantro Lime Rice

Infused with fresh lime juice and zest, Five Minute Cilantro Lime Rice is light and fluffy and pairs well with any Mexican inspired meal!

Cilantro Lime Rice is a delicious standalone side dish. It is also a great addition to tacos, burrito bowls, or when served alongside enchiladas.

Cooking the rice ahead of time or using ready rice really speeds up the process. Flavorful and so easy to make!

Ingredients for Five Minute Cilantro Lime Rice.

What You’ll Need to Make Cilantro Lime Rice

  • Cooked Rice – white, brown or jasmine rice may be used. The rice needs to be cooked and should be warm when stirring in the lime juice, zest, cilantro and salt for best results.

  • Limes – two medium limes. This should provide roughly 1/4 cup of lime juice and about 4 teaspoons of zest.

  • Cilantro – fresh cilantro, rinsed and finely chopped.

  • Salt – regular table salt or fine sea salt may be used.


Cooking Rice in An Instant Pot

We don’t use our Instant Pot very often but it is our go to when we need cooked rice. It is so convenient and the rice comes out perfectly every time!

Here’s our process:

  • Measure the rice and then, using a fine mesh strainer, rinse the rice.
  • Place the rice into the Instant Pot and add an equal amount of chicken broth.
  • Stir and secure the Instant Pot lid.
  • Pressure cook on high using the rice setting when cooking white rice. For brown rice, we triple the time.
  • Allow the Instant Pot to release pressure naturally, then remove the lid.
  • Fluff with a fork and serve or allow to cool naturally and store in the refrigerator in a covered container for up to three days.

How to Make Cilantro Lime Rice

Cilantro Lime Rice is an easy and flavorful side dish. Starting with cooked rice makes this dish ready in about five minutes. Super easy to make and delicious too!

Rice in the bowl of an instant pot with cilantro, lime juice, lime zest and salt on top before it is stirred in.

Cook the rice on the stove top, in a rice steamer or in an instant pot or, if precooked, warm the rice.

Add the lime juice, the lime zest, salt and the chopped cilantro to the warmed rice.

Stir until well combined and serve immediately. Enjoy!
