Recently, I made Southwest Egg Rolls in my air fryer. They were amazing but I had leftover egg roll wrappers, so that got me wondering what I could do with them to use them up. Egg roll wrappers are a very versatile product. I hadn’t really thought of them this way prior to having an air fryer. I decided to take the two granny smith apples I had and make little apple pie egg rolls with them. They turned out so great and they were so easy to make. Just the perfect tasty little sweet dessert after dinner. These would make an awesome appetizer as well!
The best thing about egg roll wrappers is that they are pretty easy to fill. It usually only takes about 1/4 cup of stuff per wrapper and they are ready to seal and cook. I made 4 apple pie egg rolls with two granny smith apples for this recipe.

Begin by peeling the apples and cutting them into small chunks. Two apples will give you a little over two cups of apple pieces.

Toss the apple chunks in 1 tablespoon of flour until they are all coated.

In a medium saucepan, melt a tablespoon of butter over medium heat. Add apples, brown sugar, salt, nutmeg, cinnamon and vanilla. Stir well.

Cook for 5 minutes, stirring often until the apples are slightly softened. Remove from heat.

Divide the mixture between four egg roll wrappers, about 1/4 cup each in the center then spread the filling from corner to corner. Fold the corner closest to you up over the filling and do the same to the opposite corner. Fold one of the remaining sides up. Continue rolling into an egg roll shape, but do not roll all the way. Leave a small portion unrolled then dip a pastry brush (or your finger) into a small bowl of water and moisten the unrolled corner. Finish rolling and press to seal closed.

Repeat with remaining egg roll wrappers and filling. Set aside until ready to cook.

Spritz each egg roll with olive oil generously on both sides.

Sprinkle with raw sugar. Cook at 400 degrees for about 12 minutes, flipping halfway through. Remove to paper towels. Serve immediately with ice cream if desired. Enjoy!
