Not everyone likes mushrooms, which is really a shame. Portabella mushrooms are delicious and versatile. My Vegan and Vegetarian friends use them in place of meat and I have to admit, a Portabella burger has become one of my favorite burgers to date! This is a great side dish with chicken or steak but also can be made and added to pasta for a meatless meal. Super easy.
Preheat oven to 425 degrees F. Then rinse and dry the mushrooms.
For this recipe you can use either a package of small Portabellas or 4 large. We buy the big ones at Costco so I was using these for this recipe. You just want to either cut them in half or in chunks if using large.
Place the mushroom pieces into a cast iron skillet and drizzle olive oil and Balsamic vinegar over mushrooms. Add sliced garlic cloves, thyme leaves and salt and pepper to taste then toss to coat.
Place the skillet into the preheated oven and cook for 5-7 minutes. Stir and then return to the oven for about five minutes more.
Remove from the oven and serve immediately. Enjoy!

- 12 oz small Portabella Mushrooms or 4 large
- 2 tbsp olive oil
- 1 tbsp Balsamic vinegar
- 1/4 tsp dried thyme leaves or 2 tsp fresh
- 3 cloves garlic peeled and sliced
- salt & pepper to taste
