Quick and easy to make, Super Simple Refrigerator Pickles are one of our favorite ways to enjoy cucumbers any time of the year. Great for snacking and ready to eat in no time at all!

Fresh cucumbers are a great anytime snack. They are full of water, vitamins and minerals, and are a family favorite in our house.

Peeled, tossed with dill and quick pickled in a balanced sweet vinegar brine, these might just be the simplest refrigerator pickles ever!

In Praise of Cucumbers

Fresh, cold and crisp, lightly salted or in a salad, we love cucumbers!

There are so many great things to do with them and they are available all year long.

Some of our favorite side dishes like Creamy Cucumber Salad and Perfect Potluck Pasta Salad feature cucumbers. They are one of the things we always seem to have on hand.


The Problem with Cucumbers

The thing with cucumbers is that you might forget you only have a limited time to use them. Sometimes, I’ll realize that the cucumbers I have stashed in in the fridge are barely holding on. 

I learned a long time ago that the two choices at that point are to toss them (what a waste!) or to peel them and whip together a quick and easy brine and transform them into these Super Simple Refrigerator Pickles!

How to Make Super Simple Refrigerator Pickles

One of our favorite things to do with cucumbers. So easy, so tasty, and quite possibly the simplest refrigerator pickles ever!

Peel the cucumbers and cut into slices.

Place into a medium bowl and sprinkle with dill.

In a small bowl or measuring cup, combine water, vinegar, sugar and salt and stir until the sugar and salt have dissolved into a brine.

Pour the brine over the cucumbers and dill.

Cover and refrigerate.

Cucumbers, brine and dill in a covered bowl in the refrigerator for Super Simple Refrigerator Pickles.

Leave in the fridge for a minimum of 4 hours but these are best if left for 24 hours before eating. Store in the refrigerator for up to a month. Enjoy!

Ingredients

  • 2-3 medium cucumbers
  • 1 tbsp fresh dill or 1 tsp dried
  • 1 cup water
  • 1 cup white vinegar
  • 1 tbsp sugar
  • 1 tsp salt
